Editorial Reviews

Amazon.com Review

With 1000 Low-fat Recipes, Terry Blonder Golson has produced the definitive resource for creative low-fat cooking. An experienced chef and cooking teacher who specializes in low-fat home cooking, she has developed an extraordinary range of simple, healthful, and delicious recipes for every kind of food under the sun, and you'll never miss the calories. Written with the everyday cook in mind, its flavorful recipes are straightforward, simple to follow, and quick to prepare: The majority take less than half an hour from start to finish and require ingredients that are likely already in your cupboard.

Many of the recipes are low-fat versions of popular foods, from oatmeal cookies and stuffing to lasagna and Kung Pao Chicken. Your taste buds will thrill to dishes like Strawberry-Stuffed French Toast, Mashed Potato Timbales, Scallops Linguine, and Chocolate Marble Cheesecake. Novices will find Golson's commonsense approach comfortable to follow, while experienced cooks will be inspired by the wealth of creative new ideas offered. The recipes are grouped by food type and are easy to access: whether you want your fish baked, whole, grilled, poached, stewed, gumboed, or pan-fried, you'll find it all under "Entrees: Fish and Shellfish." Golson also provides nutritional information following each listing. With this wealth of slimming, savory dishes at your fingertips, you will never have to skimp on taste to preserve your waist. --Jhana Bach

From the Inside Flap

1,000 Lowfat Recipes is the most complete cookbook of its kind. Here is an extraordinary range of simple, healthful, and delicious lowfat recipes for every kind of food you could want to cook, from breakfast to dessert and everything in between. It is the only book you need if you, like so many other Americans, are trying to improve your health by cutting back on fat. Unlike some other lowfat cookbooks, 1,000 Lowfat Recipes is easy to use. Written with the everyday cook in mind, its flavorful recipes are straightforward, simple to follow, as well as quick to prepare: Many take less than half an hour from start to finish. The ingredients it calls for are accessible and familiar—almost all are available at the supermarket. Many of the recipes are lowfat versions of your favorite foods like meatloaf and apple pie, Chicken Nuggets and Lasagna, even lowfat Sloppy Joes and Brownies. Others are Golson's creative inventions. Try Strawberry-Stuffed French Toast for breakfast; Chicken and Pesto Stuffed Potatoes for lunch; Five-Spice Turkey Cutlets for dinner; and Cappuccino Mud Pie for dessert. Some recipes make use of spices and ingredients found in world cuisines, but are cleverly interpreted for home kitchens. Here is an Indian-inspired Tandoori Chicken; innovative pizzas and ravioli from Italy; from China, Kung Pao Chicken and Shrimp Fried Rice. Inexperienced cooks will feel confident using the explicit recipes, while experienced cooks will be inspired by the wealth of creative new recipes the book offers. The recipes in this book, in addition to covering an astonishing range, are unique in their accessibility and versatility; the dishes are simple enough for everyday, delicious enough for company. All of the recipes fit within sensible nutrition guidelines to maximize the eater's pleasure and minimize the cook's efforts. The recipes reduce calories and fat, while emphasizing fresh vegetables—tomatoes and carrots, broccoli and greens; complex carbohydrates like rice, beans, and pasta; and lean proteins. All recipes include nutritional analyses for vigilant readers as well as helpful hints and ideas to maximize the home cook's time and effort. Whether you have been cooking lowfat meals for years or you are just beginning to do so, 1,000 Lowfat Recipes is the one resource you cannot be without.

5.0 out of 5 stars A comprehensive, easy, delicious cookbook February 25, 2000
By A Customer
Format:Hardcover
This is one terrific cookbook. The recipes work, i.e., they are easy to make, taste great, and don't require wierd ingredients. All the nutrition numbers are there, but you always have to watch portions if you want to keep the weight off. No cookbook is magic, but this one has yet to disappoint. If ever you find yourself sitting there with a couple of chicken breasts or a piece of fish, this book will help you by providing a quick, simple, tasty way to fix them. My husband is not dieting and he's enjoyed every single thing I've made from this book. This book has quality as well as quantity of recipes. I just love it.

This is by far the best cookbook I've ever read. I use it all the time and my friends actually think I'm a "creative cook" now. I especially love the Black Bean Dip and the Greek Chicken Casserole! In addition, the cover is so attractive, I use it as decoration in my kitchen!

5.0 out of 5 stars Exellent everyday recipes August 4, 2000
Format:Hardcover
I have thoroughly enjoyed this recipe book! I bought it about a year ago and have used the recipes countless times. Whether cooking for my family or entertaining friends, her recipes contain everyday ingredients that I already have in my kitchen. My friends at various brunches have begged me for recipes, so I have already recommended this book many times by word of mouth. I HIGHLY recommend this book to anyone looking for great tasting, yet lowfat recipes. VERY well done!

5.0 out of 5 stars The best cookbook I have! June 15, 1998
Format:Hardcover|Amazon Verified Purchase
I was never much for low fat cookbooks because they weren't very appetizing.  Terry has managed to give us low fat recipes that are delicious, easy to make and aren't ridiculously fat free!  The book is indexed wonderfully so you can look recipes up by item in addition to name.  I found myself even reading the front of the book!  I make at least 50% of our dinners from this book now.  I highly recommend you try Spinach & Friends - it is so easy and delicious its scary!

1.0 out of 5 stars Too much processed food and too little taste April 11, 2005
Format:Hardcover
I have to be one of the dissenters on this book. I have the 1,000 series Indian, Mexican, and Italian and all are wonderful. This one however is headed for my local used book trader.

There is no imagination in this book. I feel that the author just doesn't like food. She makes no effort to impart any taste what so ever in the recipes. Plus the approach uses lots of processed foods; things like egg substitutes, low-fat everything, and canned goods galore. I personally feel that it's possible to eat a fairly low fat diet, avoid processed foods (which I think are just as harmful as the fat), and actually have something that tastes good.

Plus the author must have taken to heart that you can't have any meat other than chicken or fish. Now I know that many cuts of beef can be high in fat, but an occasional, well seasoned, portion controlled, lean piece of beef isn't going to totally ruin your diet. But not so here. If it's not chicken, poultry, or fish; you can forget it. (And whatever happened to pork, the other white meat?)

Shop around, there are better low-fat books to be had.

My star ratings:

One star - couldn't finish the book

Two stars - read the book, but did a lot of skipping or scanning. Wouldn't add the book to my permanent collection or search out other books by the author

Three stars - enjoyable read. Wouldn't add the book to my permanent collection. Would judge other books by the author individually.

Four stars - Liked the book. Would keep the book or would look for others by the same author.

Five stars - One of my all time favorites. Will get a copy in hardback to keep and will actively search out others by the same author.

5.0 out of 5 stars easy, no-fuss meals without complicated shopping lists! October 29, 1998
By A Customer
Format:Hardcover
This is the perfect cookbook for working folks who enjoy cooking but having limited time to do it. I've begun to cook 90% of our meals from this book, and most are ready in 30 minutes or less and are delicious. Skip the oatmeal cookies - they were terrible, but so many others were great. BUY THIS BOOK if you want ideas for cooking something different, delicious and easy. Most meals can be prepared from items already in your house, so you don't have to do so much pre-planning like other cookbooks. Also, for people like me who detest cilantro, there are more than enough spices (the review about parsley being a major spice was unfair) to stimulate your taste buds. It's a great book.

I use this cookbook more than any other one that I own because the recipes are lowfat, imaginative, easy-to-make, and always delicious. The recipes range from the familiar (e.g., tuna noodle casserole) to not so familiar ones (e.g., Sesame Soba Salad). This is healthy home cooking that you can cook every day.
