From Susan Schwartz, Publisher, Surrey Books... When I found out that the incidence of diabetes in the U.S. had reached epidemic proportions, I made up my mind to make a contribution toward bringing those numbers down. After consulting with Dr. Louis Philipson at the University of Chicago, and Certified Diabetes Educator Linda Eugene, I learned that most people with type 2, and a significant number of folks with type 1 diabetes, can enjoy a wide range of satisfying and truly delicious meals if they stick to a low fat, low carbo diet. The docs and C.D.E's say "stay in control," but it's really difficult when faced with a complex recipe or a chocolate hot fudge marshmallow sundae. Sue Spitler, the editor of our "1,001" series, worked with Certified Diabetes Educator Linda Eugene to develop and test hundreds and hundreds of easy-to-make recipes for truly wonderful dishes, including the gooey, sweet-tasting desserts you think you'll never be able to eat again. Sue knows that most people are not skilled chefs, and don't have an extra minute to spare in their busy, task-filled days, so she included a chapter of 45-minutes entrees -- great for family meals and impromptu entertaining. I found this book to be incredibly helpful! Not only are there a variety of recipes, but this book also contains comprehensive nutritional information and general cooking tips for beginners.

I've been cooking for more than thirty years, and this book stands on my shelf with very few other cookbooks as one I will actually use.

I know we're not supposed to talk about the price of the book, but here goes: for my money, you won't find a better value. There really are a thousand and one recipes, but the other information truly puts this book over the top. Buy, try it. You won't regret it.

This is the most comprehensive cookbook for diabetics I've ever seen. Once you start using it, you won't be thinking of what you think you shouldn't eat, but will concentrate instead on all the wonderful and delicious recipes that will enable you to stay in control. The ones I made were really delicious, and very easy and to make, and since all the recipes have exchanges and nutritionals, including carbos, cooking diabetic meals is a no-brainer. With over a thousand recipes, you'll find hundreds you'll like; a fine addition to your kitchen bookshelf.

On the plus side, there are 1001 recipes, so you have to be able to find some you will enjoy and the directions are easy to follow. Most of the recipes keep an eye on carbs, sugars and fat, but make sure you pay attention to the sodium and cholesterol content or your meal might get out of hand. I would like to have seen them include fiber and maybe even a breakdown of the carbs and fats in the nutritional info like some other cookbooks are doing. I ran into a couple of recipes that had minor errors in them, such as a listed ingredient not being used in the steps or vice-versa. The most troubling thing I found is that some of the nutritional information doesn't seem to add up. The "Chicken-Vegetable Manicotti with Creamed Spinach Sauce" lists 435 grams of carbs for a 2 manicotti serving. I guess errors are bound to happen when you have 1000 recipes, and I expect they will be fixed for future editions, but make sure you take a good look at the nutritional info and exchanges to see if it makes sense. All in all though, it makes a decent choice for your cookbook collection.
