This beautiful Japanese purple-flowering variety of the climbing hyacinth bean is particularly popular for eating. The green leaves contrast strikingly with their purplish stems and veins, and the flat, thick, curved pods are a dramatic red color. Young beans can be sliced or used whole, boiled or stir-fried. Warning: Hyacinth beans naturally have cyanogenic glucoside (a plant compound that contains sugar and produces cyanide). Hyacinth beans should never be eaten raw. Always cook hyacinth beans well before eating.

I planted the seeds in various places around my yard. All of the seeds planted came up. What I learned is they really like full sun and well drained soil. It's also a good idea to provide a trellis of some sort to support them. The seeds that were planted in mostly shade still grew and bloomed but weren't as showy. I suggest experimenting to find their happy place. They aren't invasive from what I can tell. If you don't like where they are, then pull them up. Don't be afraid to experiment. There are no mistakes in gardening! A plant can do well in one area and 3 feet over look kinda wimpy. I plan on harvesting the seeds, planting even more next spring and providing an obelisk trellis in various places around my garden for them to twine. This is very showy!

I bought these seeds for the first time this spring. I soaked the seeds overnight, nicked them and planted them in several locations throughout my garden. They produced vigorous, thriving plants that are really easy to grow. The color is extraordinary! I don't expect they'll live through our winter here in Austin (Zone 8b), so I'll harvest the seeds and plant them again next spring.
