Each recipe lists the calories, protein, carbohydrates, cholesterol, sodium and fat in grams as well as percentage, none of which exceed 30% fat. Many of the recipes work just as well when another vegetable in substituted for the broccoli.

On the very day of my father's diagnosis of cancer, he proclaimed, "I want broccoli every day" as the news reported Dr. Talalay's research results of broccoli being helpful in fighting cancer. Not liking the "stuff" at the time, I set out to be creative and find ways to fix it so that others would not know the ingredient was there. Besides creating recipes, I learned a lot about nutrition and that you do not have to sacrifice taste or texture for more healthful eating options. By the way, I now like broccoli!

Broccoli is one of the healthiest foods on earth. It contains vitamins A, C, Beta carotene, fiber and nitrogen compounds, called indoles, which various studies indicate are effective in preventing cancer. Broccoli also contains significant amounts of calcium, potassium, thiamin, riboflavin, niacin, iron and is low in sodium. A single cup of raw broccoli supplies your daily vitamin C and Beta carotene requirements, has less than 1/2 gram of fat and only 24 calories.

The word "broccoli" is derived from the Latin word "brachium" which means branch or arm. The branch-like vegetable is a member of the cruciferous family, and had increased in popularity because of its anti-cancer properties. When sliced lengthwise, broccoli's inner stem portrays a cross-like pattern, thus the term cruciferous.

Every recipe (except Elephant Broccoli Stew, included just for fun) has been computer analyzed for specific nutrients.
