Yes, these recipes are indeed fast, but delicious is another matter. The author of "The 15-Minute Chef" column for the Bergen Record, Mack presents quick-and-easy recipes for main courses only, with menu suggestions for each one that rely in most cases on store-bought or bakery desserts and side dishes from the deli counter (Sardine Raclette with spinach salad, pretzels, and sliced apples is not one of her better inspirations). And although the recipes mostly do not use convenience foods, the purchased accompaniments can get expensive. Still, most of the recipes are fine for family meals, and busy cooks with little time to plan could certainly find some dinners here?perhaps served with their own accompaniments.

Take newspaper food editor Mack at her word--if you already have all the ingredients and sliced, diced, and minced vegetables at hand. Because one quarter of an hour is the time it will take to prepare any of the 500 main meals showcased. In terms of one-dish entrees, Mack literally leaves no ethnic village cuisine untouched. There is Greek salad, lemon soup, chicken cacciatore, halibut ragu, among many other choices. Few require more than a half dozen ingredients; all are accompanied by menu suggestions--for example, appetizers, side dishes, desserts--that will transform one dish into a feast. Unfortunately, despite Mack's claim of healthy fixings, there are no nutritional analyses. Barbara Jacobs
