The American Sturgeon Caviar from Little Pearl is delicious by itself or as a main flavor in simple recipes. I made parmesan shortbread, sliced cucumber, scallions, creme fraiche and topped with American Stugeon and thought I'd gone to heaven. So did my guests :) Love it.

I got this caviar and others (some through Amazon and others at a local gourmet store). This was the 'best' in that it was least salty...but I have to say the difference in saltiness was really slight. Shipping costs for this item run $25. (for overnight express, and I don't blame the vendor that it arrived a day late with melted ice-pack), bringing the 'sale' cost to $70.+ American sturgeon at a gourmet store was $34./0z, making it less expensive. The egg size/freshness was similar across all the caviar we sampled (including a Japanese Tobikko, slightly 'sweeter' than sturgeon/paddlefish). This is a nice caviar, but consider shipping costs before ordering--you may be able to get the same/similar items closer to home, for less. I also recommend reviewing articles on American sturgeon to have an idea of what you're getting for any price...wild vs farmed, what 'kind'...and remember that in a blind test years ago, American paddlefish 'masquerading' as Russian beluga won!
