I wish Amazon would put actual specifications on their web site for products like this. It's hard to tell from the photos just what you are getting. It turns out the so-called "mesh" is actually punched holes in sheet metal. That much one can probably see in the online photo, if you look closely, so it is not my main issue with this item. The main problem is the "fine" part since the holes measure about 1.4mm in diameter, huge in comparison to my real mesh strainer with web spacing of 0.5mm, both measured with a digital vernier caliper, and that is not even my finest mesh. I have another strainer at about 0.3mm that I typically use to skim foam when I first start making a new broth or stock.

I think this chinoise strainer is OK for a first pass to get the heavy solids, but I would still want to do a final pass with my 0.5mm strainer for a good clear broth or sauce preparation. On the whole, I decided to return it because my coarse mesh strainer has 1.5mm mesh, so almost the same as this so-called "fine mesh" chinoise.

I have a huge industrial one just like this, I use it a lot for huge pots of stock but for many things it was way too big. I ordered this smaller version of the same thing and I use it constantly and love it! The size is perfect for daily kitchen use. All my friends borrow it and plan to order one too. It is very sturdy and well made it also washes easily. I use it for stock, removing seeds from cooked fruit and vegies for canning, pies and for making puree or just use as a colander or strainer. It measures from the end of the handle to the end of the strainer 17 1/2'' not including the hook which is another 3/4''. The inside opening of the strainer is 8'' across and the depth top to bottom is 9 1/2''. So even though it is much smaller then I am use too it is not a small strainer it is just the right size. The hook opposite the handle is great to hold this in place over a deep pot or bowl. This is a rigid strainer with no flex so you can use a cone pestle nicely with it. It is a very useful and necessary kitchen tool. A+ quality!

MESH is a material made of a network of wire or thread. This item contains no mesh as described. It's nothing but pierced steel sheet where the mesh is supposed to be. Total misrepresentation.

Good product; a little bigger than expected so I can't really store it in my cabinets but it does what it is supposed to; for the price, it is a pretty good deal; I am much used to the ones that are a lil thicker metal and heavier but those are supposed to be used for industrial type cooking so this one works well for me in my little kitchen without the extra weight and it serves its purpose.

This was the first china cap I purchased and I think it is great. The size is ideal and the price is right! I will say that since purchasing this, I also purchased a fine mesh one that I tend to use more since I strain a lot of delicate sauces and stocks, but if you need a basic strainer, this is a great buy.

We haven't used the Chinois yet but I can absoulutely say that it is well made and I am sure it will be a hit with my wife, once she has the opportunity to incorporate it into her culinary use. It was inexpensive and shipped very quickly.
