1. Microwave the pellets on a plate lined with paper towels for 1 minute. Even if you're in a dry climate, the pellets can still get some humidity in them and this is your enemy.
2. A friend recommended (and I've recently started trying) to let it sit for 10 minutes after you've blown out the flame so it has a chance to get smoking (literally).
3. Check every 10 minutes for the first 30 minutes that it's in the smoker to make sure it's rolling. Blow on the pellets a bit to make sure they're still little embers.
4. On the rack above the smoker, put a folded over piece of aluminum foil to ensure that your mop or juices from the meat aren't dripping onto the pellets. This tip should be pretty obvious.
5. Ensure that there's plenty of ventilation. If you have a wood tray loader, keep it out of the smoker.Read more ›
Fast forward to the main event -- I put my brisket in the smoker, light the pellets in the tray (tinfoil tented over the top to protect from dripping). All is going well -- lots of smoke coming out of the wide open air vent (recommended to ensure there's enough oxygen to keep the pellets burning). I cook the brisket with smoke until it's time to wrap it in foil (about 5 hours). I open the smoker and find out that the pellet tray had snuffed out very early on in the process only about 2 inches burned). The smoke I had been seeing the whole time had been coming from the drippings from the brisket hitting the heater box that surrounds the heating element!!
Apparently the open vent wasn't providing enough oxygen. Fast forward a few weeks to a big family cookout where I put in my Masterbuilt smoker 7 racks of baby back ribs. Same formula as before - pellet tray smouldering, tented with tinfoil to protect from drippings. This time, after some research, I had the top vent of the smoker wide open and I pulled out the chip feeder tube about 1/2 way to allow more airflow. I wasn't so naive this time and checked in on my little Amaze N Smoker tray after about an hour... and found it had gone out!!Read more ›
I bought an electric smoker that the food tasted like creosote.... bitter.... tongue tingling bad flavor.... controlling the smoke to get a light flavor was next to impossible.... after reading many, many revues of the AMAZIN, I got one and tried it... It took a few attempts to understand the burning of pellets, stop food from dripping on them and putting out the fire, but once all was figured out, great smoked food was on the table... The assortment of pellets from 100% fruit wood to the mix called Pitmaster's Choice are what they are stated to be, providing a flavor profile that is left up to the smoker.. Apple, peach, blended.... Awesome control of flavor for the home smoker...
There is a learning curve when using it.... Keep it cool for long burn times... up to 11 hours with mine... it needs enough air to keep smoking.... water pans create moisture and will put out the fire... Keep the top vent wide open for good air flow out and maintain good airflow into the smoker... Great food need thin smoke and air flow.... It can be used in a cardboard box to cold smoke stuff like cheese even... I have been using it for over a year and I will not change to any other smoke generator... period... no electricity... take it camping... use anywhere.... Awesome device....
I bought the AMAZEN to use in my Masterbuilt 40 and 30 inch electric smokers. All i can say is if you own either of these smokers it will be the best money you can spend to get consistent thin blue smoke...it turned my ho-hum smokers into quality smoking machines. No more running to the smoker every half hour to add chips...fire up the Amazen and you have up to 11 hours of quality smoke at hand. 24 hours of cold smoke on belly bacon...2 fills...2.5 hours of cold smoke on cheese no problem. 11 hours of smoke on a boston butt for pulled pork...fill it..light it and forget it.
There is other products in the Amazen line of smoke generators...search out Amazen products...You will be happy you did!!! I'm sure glad I did!!
