A-maze-n-smokers(amns) are light weight, durable and portable smoke generators, that produce great quality smoke for cold and hot smoking. They are versatile enough to be used in just about any smoker or a grill. The original a-maze-n-smokers were designed to burn sawdust for cold smoking, but customers quickly found them useful at higher temps. The "new" a-maze-n-pellet-smoker(amnps) is also a light weight, durable and portable smoke generator, but it's designed to burn pellets or sawdust. The new amnps will produce smoke during cold smoking and hot smoking, tested up to 275°! Designed to supplement smoke in an electric smoker, but can be used in just about any smoker or grill.

There are so many factors to smoking that can make beginning this unquestionably rewarding hobby very intimidating. I'm by no means an expert, but the combination of my electric smoker (I didn't want yet another thing I had to worry about fuel for which makes this very economical) and this pellet smoker make my results taste truly exceptional. I can say with confidence after using this for over a year that I'd have thrown in the towel a long time ago if not for this amazing tool. I've gotten 10-12 hours of thin blue smoke out of this guy once it gets going. Sometimes, it can be difficult to get it rolling. A couple helpful tips, some of which are particular to the Masterbuilt 20070910 30-Inch Electric Smokehouse Smoker, Black or an electric smoker in general:

1. Microwave the pellets on a plate lined with paper towels for 1 minute. Even if you're in a dry climate, the pellets can still get some humidity in them and this is your enemy.
2. A friend recommended (and I've recently started trying) to let it sit for 10 minutes after you've blown out the flame so it has a chance to get smoking (literally).
3. Check every 10 minutes for the first 30 minutes that it's in the smoker to make sure it's rolling. Blow on the pellets a bit to make sure they're still little embers.
4. On the rack above the smoker, put a folded over piece of aluminum foil to ensure that your mop or juices from the meat aren't dripping onto the pellets. This tip should be pretty obvious.
5. Ensure that there's plenty of ventilation. If you have a wood tray loader, keep it out of the smoker.

Love it, but I see a few negatives reviews that I think have been written unfairly. Used properly this products Functions near flawlessly.

1. Instructions say to light and keep a flame going for ten minutes. This a must. After all you wouldn't light a charcoal grill and 30 seconds later, throw burgers on. Instead you nurse the bed of coals u til it becomes self sustaining. This product is no different.

2. Dry dry dry, moisture is your enemy. I've taken little desicant bags and placed them in my containers of wood pellets and dust and keep them air tight when not in use . Next, make up a couple of tin foil hats to protect from meat dripping from above. Probably the most overlooked problem is humidity. If you are running a large water pan, ur also creating a sauna inside ur smoker/grill. ever notice all the moisture droplets everywhere inside the smoker? Ya, that humidity is very detrimental to a smoldering fire. I would suggest placing the pellet smoker just as low as U can get it in the smoker, and as far from the water pan as possible. If it has to be above the water pan, place one of the tinfoil hats under the pellet smoker to block the rising steam.

I've seen airflow being blammed for the fire going out, I respectfully totally disagree. My sealed/insusalted electric smoker has only 1 vent, and it has played no part in the ability of the pellet smoker to make smoke. Full closed, full open its continues to smoke its little heart out. Moisture is the problem, not air.

Air flows help keeps the smoke moving, keeps the smoke from stagnating and becoming soot on your food. More air is less smoke, which just requires the food to smoke soak longer. With that said, i usually keep my vent about 95% closed.

I own a Masterbuilt electric smoker that frankly hasn't been very good about producing smoke. This is a common problem which is why I purchased the Amaze N Pellet Smoker based on the overall ratings and comments on the product. My initial experience with the pellet smoker was good. Just for a dry run (I had guests coming over the following weekend), I loaded the tray, ignited it and proceeded to run my smoker at temperature for about 4 hours. The pellet smoker performed flawlessly -- great blue smoke with no supervision required. Man! was I stoked to cook a brisket.

Fast forward to the main event -- I put my brisket in the smoker, light the pellets in the tray (tinfoil tented over the top to protect from dripping). All is going well -- lots of smoke coming out of the wide open air vent (recommended to ensure there's enough oxygen to keep the pellets burning). I cook the brisket with smoke until it's time to wrap it in foil (about 5 hours). I open the smoker and find out that the pellet tray had snuffed out very early on in the process only about 2 inches burned). The smoke I had been seeing the whole time had been coming from the drippings from the brisket hitting the heater box that surrounds the heating element!!

Apparently the open vent wasn't providing enough oxygen. Fast forward a few weeks to a big family cookout where I put in my Masterbuilt smoker 7 racks of baby back ribs. Same formula as before - pellet tray smouldering, tented with tinfoil to protect from drippings. This time, after some research, I had the top vent of the smoker wide open and I pulled out the chip feeder tube about 1/2 way to allow more airflow. I wasn't so naive this time and checked in on my little Amaze N Smoker tray after about an hour... and found it had gone out!!
