The testing program of AIB includes a detailed analysis the vinegar composition as well as sensory appraisal by professional tasters. The balsamic vinegar is judged on its aroma, taste, aftertaste, and visual qualities and then it is certified with a grade of one to four, designating increasing quality. While this is certainly better than what I can buy in the grocery store, it really isn't a very good quality balsamic. It does not have that thick, syrupy, sweet taste that allows balsamic to be drizzled over fruit. It tastes too vinegary to be used for desserts and dipping bread and all the things good balsamic is used for. For me, this turned out to be a cooking balsamic, albeit more expensive than what I buy at the grocery store. I would not buy this again. If the price seems too good to be true...

I first purchased this vinegar while on vacation and it was expensive, so i used it bery sparingly. I finally ran out and went on line to try to find it, and of course, Amazon had the exact product, AND it was much cheaper. So I ordered a couple of bottles and i can use it however i want as i have a way to reasonably replace it. The vinegar is wonderful and i am afraid addictive.
