Grilled Pork Threads

Makes 4 servings

The running of the bulls in Pamplona may be the best-known Spanish festival, but to me, the Day of the Dead, or All Souls' Day, celebrated in early November, marks an occasion any grillmeister would appreciate--the beginning of the hog-butchering season. Here is a delicious way to prepare the most tender cut of all.

Ingredients

1 pound pork tenderloin, sliced 1/4 inch thick and pounded thin
1/4 cup Pork Spice Rub (recipe follows)
2 tablespoons olive oil
Juice of 1 lemon
4 flour tortillas
1 avocado, peeled and sliced

Instructions

Grill Temperature high

Slice the cutlets into 1-inch-wide strips. Sprinkle the Pork Spice Rub over the strips, mix well, and refrigerate for at least 2 hours. Shake off any excess spice mixture and thread the meat onto skewers. Brush with a mixture of the olive oil and lemon juice.

Preheat the grill.

Cook the meat for 2 minutes on each side. Grill the tortillas for 30 seconds on each side. Remove the meat from the skewers and place on the tortillas with a few slices of avocado. Roll up the tortillas and serve.

Pork Spice Rub

Makes almost 1/4 cup

Ingredients

2 dried chilies, chopped
1 teaspoon sweet paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon dried thyme

Instructions

Combine all of the ingredients in a small bowl and mix well. Store in a tightly covered container.

Great meat recipies with great tips. Broken into sections by countries Germany and some of the less published countries had some creative options. There were more than a few new to the grill recipies and great ideas for exploration. The Italian and French recipies were quick stepping stones to the fun food. I would have liked to see a few more "grilling" recipies for vegatables and side dishes. Overall some tasty options.
