I was introduced to this magnificent book by a friend and couldn't wait to get my own copy. It is worth every dime spent.

This is the kind of book/cookbook that you will not part with and will look forward to giving as gifts (please note that this book would give a vegan/vegetarian nightmares as it is very graphic...seriously).

Whether you're a hunter, fisherman, outdoorsman, history buff, homesick cajun or just a cook looking to expand your repetoire, this book has a lot for everyone! It has nice heavy-weight glossy paper, good solid binding, tons of photographs and illustrations, a terrific historical information section and beaucoup great recipes, starting with, of course, the rouxs (multiple roux recipes).

My old cajun MawMaw fixed many a creative and delicious meal using possum, squirrel, coon and other mysterious vittles (the critters and parts of them that regular folks definitely did not eat!) that I genuinely do NOT want to know the identity of. Most of these meals were born of necessity...poor farming people in the depression ate what they could kill and I am convinced that a good cajun cook can make ANYTHING taste fabulous.

Folse has recorded in this book a stunning variety of recipes using all those lesser known delicacies including nutria, beaver, muskrat as well as hunting standards like deer, rabbit and duck. Should this "recession" that we are currently experiencing turn into a long-term depression, this cookbook will be worth it's weight in gold for those trying to stretch scarce food dollars.

A glorious pictorial; educational, beautiful and totally fun! Cookbook collectors, it's a definite. Even if one never prepared a dish (say not!) it is a beautiful object.
