Agour Ossau-Iraty is a sheep's milk cheese, made in the valleys and pastures that separate France and Spain. This cheese has a fruity and herbaceous flavor profile with a nutty aftertaste that many find surprising, but enjoyable. At firss best served with fresh fruits and nuts to compliment its subtle sweetness. Pile slices onto baguette or crackers and top with tart fruit or anise jams. When looking for a wine pairing, don't be afraid of an aggressive wine, like a Barol o.
