I would not use anything but Airbake cookie sheets for my Christmas baking. Well, the other cookie sheets are retired to serving as drip pans in the oven...
My Grandma showed me hers several years ago. I think she is using different cookie sheets now, but I will never go to anything else as long as I can still get these. I just bought this set to give my future Mother in Law one. She had never used them. I kept the smaller one for myself. I bake cookies that if they brown, they are burned. These sheets are also great for Spritz cookies, since you don't want them to brown either. Cookies just slide off with a gently push. I LOVE these and am so disappointed that you can't buy them here in Western KY anywhere I look anymore. Thank goodness for Amazon! These are amazing, if you burn cookies...it's user error or a demon possessed oven. These things are that good :)

p.s. you can put them in the dishwasher but don't soak them. You would never need to though, things don't stick (except burned on butter from someone who buttered homemade biscuits on them and burned on the butter in the oven)...and it wasn't me! Despite the ugly circles on the pan from the butter it does NOT stick even now. I still bake on it and am trying to figure out how to get the circles off it. The pan still works like a charm!

3 very big positives with these cookie sheets
1) You can fit about 4 dozen cookies per cookie sheet, and they take up one entire rack in the oven - (do not use metal spatulas on these cookie sheets or they will scratch) - most cookies slide right off anyway
2) Not one burnt cookie in an entire weekend of baking thousands of cookies for our annual cookie bake - cookies were absolutely perfect!
3) Clean up is a breeze, simply wipe and dry

I highly recommend these cookie sheets, this is the first time in 5 years of our group doing this cookie bake that we had absolutely not one problem thanks to these cookie sheets.

These pans do exactly what you buy air-bake pans for - prevent scorching on the bottom of cookies and other baked goods. They really work! Well worth the extra cost.

They were packaged very well for shipment, and delivery was on time. The products work as advertised when using the cooking instructions provided with 99% of foods that require the use of a cookie sheet. Anybody who has bad luck with these either has 1 of 3 or all 3 problems: 1) Water is inside the pan due to submersion, which you are instructed not to do for obvious reasons-will burn food. 2) Not using included cooking directions as reference when setting the oven temp and cookie sheet height. 3) Your oven temperature sensor is not functioning properly or at all.

I bought these cookies sheets specifically for baking French macaroon cookies & meringue (cookies with no butter/oil). They bake these beautifully because they allow very little bottom browning which is what you want in this type of cookie. I do not like them for any other cookie ie. chocolate chip, peanut butter, butter cookies, cut-outs, etc. They just don't brown as well as my regular sheet pans & browning is important for flavor development in a cookie with fat. You end up baking the cookie longer than necessary and often end up with a dry cookie. My oven is properly calibrated so that is not causing the problem.

I never use these "bare". I always use parchment paper or a silpat to make cleanup easier.

One other quibble: Since they have an airspace, when you wash them, water gets inside. Then they "pee out" and are a nuisance to get dry. It says in the description, these are dishwasher safe. I would not recommend that. When I need to wash them, I use a wet/soapy cloth & wipe them clean.

Cooks Illustrated has done testing on cookie sheets & reached the same conclusion. In fact, they are the reason I bought these - their downgrade/negative ratings were what I was looking for.

I gave this set to a woman that I consider has the talents of a professional baker. She says they are the "best she's ever used".

These are super great. Easy to clean, and they look nice. They do get scratched easily, but that let's you know you're using them! :)

I have used Airbake Insulated Cookie Sheets for several years now and I am still thrilled with them.

My Xmas/sugar cookies come out beautifully baked all the way through without being dark on the bottom. They are light and tender.

My Peanut Blossom cookies (peanut butter cookies with a Hershey Kiss in the middle) also come out well baked yet still soft and chewy.

My biscuits no longer burn on the bottom while waiting for the rest of the biscuit to be done.

However, one of the best uses for these cookie sheets that I have found is to put them underneath my homeade fruit and pumpkin pies to bake. I cover the cookie sheets with aluminum foil to catch spills for easy clean up later. Since using this method my pie crusts have been baking beautifully along with the pie filling so that everything gets done at the same time. Now I get lightly browned pie crusts with the filling totally baked.

"Sticking" has not been an issue but have used PAM on those rare oocassions that I think I might. I do use a metal spatula to remove items with no problems.

I have NEVER left my sheets to soak in water but clean them immediately with a damp, soapy sponge, give them a quick rinse and towel dry. The insulation has never been compromised by cleaning them this wasy.

My Airbake oookies sheets are one of my favorite pieces of bakeware and are worth every penny that I paid for them.

I bought these two cooking sheets for under $25, because I thought this was a fair price and I was interested in buying something that was NOT nonstick (hard to find! especially at a decent price). I decided to try these sheets that touted the Airbake technology, because my stove cooks unevenly. So far, so good. We have not ruined cookies yet, and the other day we tested them on homemade pretzels -- worked like a charm. Very pleased.

I wasn't able to find new airbake sheets to easy. Went to bed bath and beyond and they only had one kind. The smaller one of these isn't a full size cookie sheet but they work great and it was a good price. I think it is worth having air bake sheets and keeping things from cooking to fast on the bottoms.
