Emerilware Stainless 12-Inch Wok

After unpacking Emeril's Wok, I was taken aback by its beauty. It features outstanding workmanship and has a mirror finish. It looks like it's made of pure sterling silver. I admired it on the kitchen counter for about two weeks. Finally, I fired it up with a simple veggie and shrimp stir fry. Because of the superior conductivity of it's copper baseplate, I was able to use the smallest burner on medium heat with outstanding results. Something I've never been able to do with my aluminum "non stick" wok.

I bought this wok ($89) after taking a very good class in wok cooking techniques at Williams Sonoma. I have a nine-inch Calphalon Commercial wok, but it will cook only two people's entree. In the class, all kinds of woks were demonstrated; the instuctor's favorites were All Clad (stainless) and Calphalon. The 14 inch All Clad flat-bottomed one (coverless) he cooked with was about $200 and not as high as the Emerilware one. Bigger ones and covered All Clad one were even more $. Emerilware is made by All-Clad and has the sandwich material going up the sides which is important to some aficionados. The height and domed cover made it easy to cook without splashing out. Cooking for four was a breeze and it cooked very evenly and was very hot on a medium-low gas setting. It also cleaned up easily, after the recommended soaking. The two short handles were much cooler than the pan, but still hot to the touch, so you could shake it quickly without gloves; for a prolonged session, I will wear a glove on one hand.

The Emeril Wok is of the highest quality. It heats the food evenly.
I love this wok. this wok will last a life time.

The 3 Qt Steamer listed as a buy with does not go with the wok. Rip off advertising by Amazon. The Steamer is not an accessory for the wok.Emerilware 3-Quart Stainless Steamer Insert
