Beautiful pan
This is a beautiful pan and it has performed wonderfully. Unfortunately, using high heat for stir-fry causes the copper to darken more quickly. Although it's easy enough to restore the bright color with regular copper polish, I reserve this pan for entertaining only. I use a plain stainless All-Clad pan which performs equally well for everyday cooking.

Looks pretty, but ...
I bought this to stir-fry tofu so that I could phase out my non-stick pans. I followed all-clad directions to warm the pan on low heat, add some oil and then add the food. But both times, the tofu has stuck and become a mess. I haven't tried veggies yet. Maybe they will work better.
