Our most frequently used pan,

This one piece, constructed with an copper core and aluminum layers inside the stainless steel, is so amazingly great to cook with, we use it for almost everything! It is large, so we don't need a griddle or another skillet. It has a lid, so we can make roasts and cover them in the oven. It is quite easy to clean. We have gas heat and the distribution of heat with it is nothing short of awesome. I think we use this one pan more than any other two pans combined. Get one. You won't regret it.

This is one of the few copper core pieces of All-Clad I own. I don't think the increased heat sensitivity matters that much for most pots and pans. That said, this is a great pan, really responsive and conductive. I've almost exclusively used it on low heat (gas stove) and it's like using other pans on much higher heat. I mostly use it to saute, make things like stir-fry and paella, and anything that needs to be simmered before being baked in the oven. I've never used it as a fry pan because I've never needed one this big but it could easily do that too. It is simply a beautiful pan and goes easily to the table for serving, even for a dinner party. I can't think of any other pans I'd do that with, except possibly a le creuset french oven.
I don't cook much meat so I was skeptical about ordering something called a braiser but it is much more versatile than the name and is a generous size and depth for a wide range of uses. It could even work as a medium-sized roaster in a pinch. For me, value comes down to versatility and appearance more than quality/materials used but I think this pan excels in all of those categories. |
