All-Clad is one of the best known cookware brands when it comes to high-quality, well-made pots and pans. The various lines they offer can be very different and often confusing though. In my opinion, the LTD2 line is simply the best you can buy at the moment - featuring a "best of both worlds" type arrangement between function and ease of clean-up. The variations between All-Clad's many lines really comes down to the materials used to form the clad components of the pans. The LTD2 line is made of a 5-ply clad construction that has dishwasher-safe anodized aluminum on the outside, then two layers of aluminum with a stainless steel layer sandwiched between them, and then a final layer of stainless steel on the inside cooking surface. The layers of aluminum offer quick heating and temperature control while the stainless layers offer uniform, lateral heating and a nice non-reactive cooking surface. Some of the other all-clad lines such as their copper and copper-core lines will have better temperature control and heating speed, but don't offer the convenience of being dishwasher-safe. This is also what makes the LTD2 line a huge step-up from the LTD line - being dishwasher-safe.

This particular pan is very well-made, offers a nice and light, yet solid feel to it, and offers superb temperature control. I opted for the 4-quart saute because it seemed to be almost the perfect size. I usually can fit about 4 large chicken breasts in it with a little room left over.

Over the years, I've accumulated a veritable army of cookware, including stainless skillets, saucepots and braisers, but have always wanted a nice saute that is fairly large. I've had the opportunity of using de Buyer and Mauviel saute's, working in high end professional kitchens, but I almost resented having to clean copper, on regular basis. I enjoy using enameled cast iron a lot, because of heat retention and ease of cleaning,but you cannot do fond in it. The AllClad 6qt. deep saute works well in my home kitchen because it doesn't take up any more room on my stove than necessary and having the deep sides, there's no mess to clean up from stovetop. Heated and oiled properly, it is virtually non-stick and if used for braising, BKF makes the job of bringing it to "like new" status, with ease, in about thirty seconds, after a short soak. I suppose that having the anodized exterior would be a plus for people that would that would consider putting it in a dishwasher for cleaning, however I personally do not believe any cookware (outside of primarily useless, non-stick coated cookware), should ever be machine washed, but rather, by hand, and dried immediately afterwards, especially considering stainless picks up water spots so easily. As for its cooking prowess, being a five ply pan, it really holds heat nicely, provided one adds "cold" ingredients at room temperature and liquids at boil point, braises as well as my Le Creuset, Staub, Copco, Descoware, etc. and with its tall sides, becomes an all purpose tool for sautéing (although heavy for most at almost seven pounds), sauce making, soups, stews, gratin, stir fry and of course, searing almost on a par with the de Buyer mineral steel skillets (now, that's non-stick!), which is pretty amazing. If I were to be stuck with only one cooking utensil, this might be it, simply because of it's versatility, great quality and consistent results.

This is just what I wanted. A deep pan that will contain splatters and even cooking like all all-clad pans. This is just great and had to have the LTD to match all my other all-clad products.
It is quite heavy but it does all that I wanted it to do.
If you need a deep and large pan this is it!
