My All Clad LTD 13" French skillet pan will now get more use now that I converted from an electric range to a (natural) gas range. I tried using the 13" French skillet on my 8" electric element and was disappointed with the uneven heating: the outer portion of the bottom did not get hot enough to cook the food (in my case, omelets). That was not a problem with my All Clad 12" fry pans (Copper Core and LTD). Now that I have a natural gas range, the French skillet's entire bottom heats evenly and my omelets turn out great. The handle length works for this largest of All Clad's French skillets. I decided to buy this pan over the All Clad 14" fry pan while both pan bottoms are the same diameter, the French skillet's pan top has a smaller diameter than the 14" fry pan due to the steeper slope. If I need to cover the French skillet when cooking, I can use the lid from my All Clad 6 quart sauté pan (which fits)! There is no All Clad lid I know that I can cover the 14" fry pan, not even if you buy it separately. And the 13" French skillet feels lighter than the 14" fry pan (LTD or stainless). If All Clad made the French skillet in Copper Core, I may get it depending on the weight. Copper is heavy.

PROS:
Weights less than the All Clad 14" stainless or LTD fry pan but with the same bottom cooking area.
Can be covered if you have the lid for the stainless or LTD 6 quart sauté pans

CONS: Does not heat evenly when used on an electric (coil) range.

One last note. If you have a gas range (mine is a Wolf) I really noticed just how quickly the Copper Core pans heats up when compared with the stainless and LTD lines. When I was using an electric range, I appreciated how quickly the Copper Cores heat up.

Was hesitant to purchase this pan due to reading some of the less favorite reviews. However, I sure am glad that I bought it. It lives up to the All Clad standard of quality. Great pan!

I finally got rid of my aging, flaking non-stick pans last month and bought an All Clad stainless set. It has been fantastic, and I wanted to add a larger pan for big jobs.

I was slightly reluctant to purchase this item because of some of the less favorable reviews. I love to cook at home and I've been very impressed with my other All Clad stainless cookware. I have several tri-ply pieces and a really great d5 4 quart simmer/saute pan.

This 13" pan does not disappoint. I used it for the first time yesterday to make part of my Father's Day brunch.

I made rosemary garlic chicken breasts and the results were great. I was able to cook 6 large chicken breasts at once with plenty of room. Excellent browning and even cooking from center to sides. No sticking, just an easy flip with a spatula. After browning, the lid was useful to lock in heat and cook thoroughly. I prefer the high sides of the French Skillet over the traditional fry pan - less splatter. No need to blast the heat! Medium flame on a gas range was just right.

For cleanup, just a soak with warm soap and water, then a good scrub with a soapy sponge. Good as new.

I also have the 11" french skillet and omelets come out perfect. Eggs don't stick to these pans! I thought I would have to buy another non-stick pan for eggs but I was wrong. Great performance, great product. Thanks All-Clad!

Good All Clad quality with fairly decent heat distribution. Recently, two of my older pans have been retired/recycled, and I have switched from the standard shallower frying pans to the "French style" and I'm pleased to be able to easily build up greater volumes of liquid, and have the edge seal very tightly with the domed lid. This size is a bit big to use all the time; the 11 inch is certainly more useful to me on a day to day basis.

I received this pan as a Christmas gift, purchased from Williams Sonoma. It was wonderful to cook with, but I noticed that the center of the pan seemed higher than the edges, causing any liquid to pool along the sides. When I took it back to the Mall of America Williams Sonoma where it was purchased, they discovered the pans they had in stock all had the same cupping! They told me it would be reported to All-Clad, and that I should get a new pan, but haven't heard anything yet, and that was four months ago. Just wondered if anyone else had the same problem. The pan cleans up beautifully with just a bit of soaking, and I use the new professional Pam which doesn't darken and stick as regular Pam does.

Bought this for my wife. She loves it. Nothing sticks. The handle sticks up a little too high, but it is definitely worth the inconvenience.

I don't know what to think about this pan. I am a pretty experienced home cook, I despise non-stick pans and I am used to anodized aluminum and Le Creuset, and also I own a couple of Calphalon stainless steel saucepans. In addition, I still love and use my old Lodge cast iron dutch ovens quite a bit. Unfortunately, my anodized pans are losing the anodization, so I decided to replace them with stainless steel. This All-Clad 13" fry pan seems thin but it cooks fairly well and evenly, my food didn't stick to it (you must let it get pretty hot over medium heat), although it does have a higher center than the perimeter which is slightly annoying. But not as annoying as the strange handle: it points to far up from the pan, it's hard to hold - forget about flipping your food, the pan tends to turn in your hand when you pick it up and the handle actually hurts, as it is shaped with a deep groove right in the top along the length of entire thing...What is up with this design? Maddening. It is also too thin, hence the pan tends to rotate in your hands. Don't the designers at All-Clad cook themselves and test their pots? I suppose not...I am pretty disappointed, this is my first All Clad and probably my last. Henkels now started making stainless steel pots, you might want to check them out...They seem very good quality.

Update; I am returning the All-Clad-weird-handle-pan today, no more All Clad for Me!
