4.0 out of 5 stars Great except for inner ring
This is a wonderful double boiler insert with one minor exception. The ring that keeps it from falling into the pan with the water in it catches the food/sauce and therefore is harder to clean and mix. Now having said that, I still love this pan, I just wish the inside was totally smooth. I use it to make chocolate candies/truffles and the stuff melts up perfectly...

3.0 out of 5 stars Does the job, but hard to clean
As one of the other reviews state, the lip that allows the pan to sit on top of the 3- or 4-quart pot creates a recess inside the pan that makes it hard to get whatever you're working on out of the pan, as it gets caught in the recess. The interior should have completely straight sides. Otherwise, it does what it's supposed to.

This is a wonderful double boiler insert with one minor exception. The ring that keeps it from falling into the pan with the water in it catches the food/sauce and therefore is harder to clean and mix. Now having said that, I still love this pan, I just wish the inside was totally smooth. I use it to make chocolate candies/truffles and the stuff melts up perfectly. Controlling the temperature is key when melting chocolate and with stainless steel its easy. I really should own two of these pans but kitchen space is limited.

(fits the non loop 3/4 qt sauce pans perfectly, The 4qt sauce pan with loop it doesn't seat well, as the loop lifts the edge allowing steam to escape.)

3.0 out of 5 stars Useful but so-so quality, January 21, 2003
By A Customer
This review is from: All-Clad Stainless 3-Quart Double-Boiler Insert (Kitchen)
This is a very useful accessory to your All-Clad set, however, it is rather poorly finished compared to the other pieces (mine has some burrs and rough edges on the bottom surface). This piece is made in China and it is my opinion that All-Clad's Chinese-made pieces are inferior to the US-made ones (I own several of each and have compared many others in stores).

Also, as with the Steamer Insert, there is some "slop" in the fit between the insert and the 3 or 4 quart sauce pan.

2.0 out of 5 stars Doesn't fit my All-Clad pots!, February 6, 2008

I would have been delighted with this double boiler insert (despite the groove noted by previous reviewers) if it had performed as expected. I own three All-Clad LTD pots I should have been able to use it with : 3 quart, 4 quart and 5 quart. The insert doesn't fit the pots precisely or snugly; it slips and tips when set onto the pots. Obviously, this makes it unsafe as well as unusable. Since I agree with some reviewers that the qualty is inferior to All-Clad products produced in the USA, I guess it may be that the items produced in China are not really a good match with the original items produced before recent globalization of the company. Maybe I just got a bad one, but a previous reviewer mentioned the same problem. For an item of that price from a company with the reputation of All-Clad, this is inexcusable.

3.0 out of 5 stars Purchased because of the reputation, October 21, 2005

I have to admit -- I bought this insert simply because I love all things All-Clad. While it heats well, the indentation on the inside is a problem. I love it becuase it allows the insert to fit snugly, but I hated working with it until I got one of those small silicone spatulas. It fits perfectly in the indentation and it's the same one I use with my food processor. I made cheese dip over for the Super Bowl and I was impressed with the insert's performance.

I see that All Clad now has a ceramic double boiler insert. I must live in a test market because I've only seen it at one store and it's not even on the store's or All Clad's website. I forget the cost but, you're buying the insert and the 2 qt saucepan as a set. The insert is removable. I like this original insert better, even with the indentation, because it's bigger.

The price is right for this broiler insert. The All-Clad 3 quart pot it fits is the pricey necessity. I also bought the steamer that fits the pot too. The quality keeps me coming back to All-Clad. My Hollandaise sauce comes out perfect- every time!!

5.0 out of 5 stars Excellent Pot, November 12, 2006

Extremely well made, heats evenly and slowly, and fits my 3 qt pot with a precise seal. I've even used it directly on the burner when I was cooking multiple courses. Love it!

I purchased this double boiler insert out of necessity for a couple of recipes I have and since I have most All-Clad pans I wanted to stay consistent. Once again this purchase did not let me down! I love it. It cleans up beautifully wth Bar Keeper's Friend and is very useful! Well worth the time and money!!

Very pleased with our double boiler insert. We have a lot of All-Clad pots and pans and have always found them to be of the best quality. The insert is up to standard.

It fits many of our pots perfectly and is very useable.

Hollandaise will never have to burn while using this.

This review is from: All-Clad Stainless 3-Quart Double-Boiler Insert (Kitchen)
I never really noticed the inner groove as a "problem" until I read the other reviews. This was part of my first All-Clad set--so nice! Yes, things stick in the groove, but I just use a silicone spatula while cooking and I don't seem to have a problem. I love the capacity and size/shape of this unit. Scrambled eggs come out beautifully in this pot, as does chocolate ganache and buttercream frosting. But sometimes my pumpkin pie filling gets bits of cooked egg if I'm not diligent about stirring out the groove. The width/depth ratio allows me to really get my whisk or spatula inside to work.

Sometimes the dishwasher (horrors, I know!) doesn't get the groove completely clean. I hand-wash it most times anyway, so that doesn't really matter too much to me.

I like the length of the handle, but I wish it were slightly thicker to make it easier to grab when using a pot-holder.
