The Roti models are not made with a three-ply construction with an aluminum core and magnetic stainless exterior. The Roti models are made in China (not America like the rest of the All Clad pots and pans) out of a non-magnetized stainless steel. They're not designed for use on induction or conventional stove tops (a common step in the preparation of gravy).
A curiousity: The All Clad Web site doesn't appear to list the Roti models. I couldn't find it under any category. This model is an orphan.

During our 1999 rating of roasting pans, we decided that the upright handles, roomy interior, and sturdiness of All-Clad's Stainless Steel Roti ($275) justified its hefty price. Since then, however, we've noticed that our top-rated pan has a tendency to warp slightly on the stovetop while browning roasts or deglazing fond. (The Roti lacks the clad construction-an aluminum core sandwiched between layers of steel-that makes other All-Clad cookware so reliable.) So when we saw that Calphalon's fully clad Contemporary Stainless Roasting Pan features a similar design-and for a mere $100-we brought it in for the challenge. To our delight, the Calphalon did not warp on the stovetop, and its lighter weight made it more responsive to burner adjustments than the All-Clad pan. This new Calphalon roasting pan has everything we want, including a reasonable price. UPDATE: Our July/August Roasting Pan Update highlights Calphalon's Contemporary Stainless Roasting Pan ($100). In the past, this pan has been part of their Tri-Ply stainless line. Until the Tri-Ply Stainless inventory has run out, look for our favorite roaster under either of those Calphalon lines.

Always reliable All-Clad!,

We received an All-Clad cook set for our wedding several years back and have always been extremely happy with its performance. So when I decided to pick up a roasting pan for my husband as a Father's Day gift ('cause nothing says "Daddy, you're the best!" like a big honking piece of aluminum clad steel) it was a no-brainer.
Like all All-Clad pieces, it's quite sturdy with firmly attached handles that stand straight up, since that's the natural way to lift something out of your oven. It heats evenly and browns beautifully. We recently did a turkey breast in the pan and the turkey turned a beautiful golden brown and was juicy and flavorful. We didn't even need gravy. The turkey forks are amply sized and plenty strong enough to pick up anything heavy without any kitchen mishaps. And best of all, it was a breeze to clean up since the rack is non-stick. I believe there is another combo offer with oven mitts, and while I'm sure they're great (actually they are since I have a pair of them from a different gift from All-Clad), I think the turkey forks are the better choice. I mean, you can always buy oven mitts, but the All-Clad accessories really are wonderful. One more thing....one of our non-stick frying pans had a problem with the coating wearing off. I returned it to All-Clad and they sent me a brand new pan (which sells for $150). Can't beat that for customer service!

I recently checked out the All-Clad roaster at Bed Bath & Beyond and decided against it. Three design flaws turned me away from it:
1) It's not tri-ply, only stainless steel. 2) It can't be used on an induction range (I don't own an induction range, but I like to plan for the future). 3) It's not flat on the bottom (raised center), so it will be difficult to use to make gravy. After a little research, I bought the Mauviel M'cook 1830 large roasting pan. It's slightly smaller than the large All-Clad, but it has five-ply construction, can be used on any range and is completely flat on the bottom. It's a beautiful piece of cookware with a lifetime warranty. Plus it's made in France, not China (like the All-Clad). I bought mine from [...] and it came with a rack included for $200.

Unfortunately I bought one of these pans because I read this expensive roaster was a tri-ply. It is not and if you put it in a hot oven it warps like crazy. Once I realized that this was not the All-Clad that I was used to I contacted All-Clad. I have an entire kitchen full of All-Clad and they told me to stuff it. So that will be the last "All-Clad" I will ever purchase. There are many alternatives which are multi-ply at a considerably lower cost. As All-Clad does not stand behind their merchandise there is hardly any benefit in buying their products. Read the Cook's Magazine review about this pan if you have any doubts.

I shouldn't have assumed that this would be cladded. How can a company like All Clad produce a $160 roasting pan without a sandwiched layer of aluminum to distribute the heat evenly. This is worthless for pan gravy! It is nothing more than a handled serving tray as far as I'm concerned, I am better off with an $30 aluminum roasting pan from a restaurant supply store. What an overrated piece of junk, for the price there is much better out there... I am disgusted by the arrogance of All Clad peddling this garbage!

I've used this pan for four years in the oven, the stovetop, for lasagna as well as roasting poultry, and love it. The rack makes roasting a turkey (or whatever else) easy--it always comes out great with no special attention--not even basting. The forks are essential for easily moving a heavy bird. I wish I'd gotten this set much sooner than I did as it's made holiday meal prep far easier.
The upright handles on the pan make moving it more efficient than flat handles and the straight deep sides are great for a big lasagna or casserole too. I haven't found the coating on the rack prevents particles from sticking entirely, but it does clean up well in the dishwasher. I've never had any trouble starting gravy in the pan on the stovetop after removing the bird and my pan has not warped as one reviewer mentioned. I generally prefer to remove the liquid from the pan after I've incorporated the flavorful bits with a flat whisk, however, so I can separate out the fat. Then I add my flour slurry and the defatted liquid to a saucepan to finish my gravy. I find this more convenient since my stovetop is usually crowded with other pans. I love my All-Clad pans and have always been able to count on them to meet my needs so I never considered spending a lot on another brand. I've not been sorry. I love this pan. It added another thing to be thankful for when preparing a big holiday meal.

I stepped up from the black, speckled roasting pans you get at the grocery store. I've had my All Clad pan for a year and purchased it before Cook's Illustrated latest review.
I made my best turkey ever. I had to give up my family's traditional overnight roasting recipe, but I think this is better. Crisp skin and I can make gravy in the pan. I've used this pan once and my only problem was that I noticed my drippings were burning, so I added a scant amount of water to the pan. This year, I'll lower the oven temperature slightly. It's a good, heavy pan. When you pull this out of the oven, you feel like you've done something! Easier to clean than my supermarket version. With only one use, I haven't observed any of the warping mentioned in other reviews. I will update my review if warping occurs.

Forget the negative reviews! This pan does a fantastic job of roasting. I will be doing a 7 lb. Choice Beef Rib-eye roast for Christmas dinner in it. It deglazes just like any other good SS pan.
It is a tad heavy though, so don't expect an aluminum feel to it. Cleanup is just like any other SS pan... use Barkeeper's Friend and it all done and shiny. There may actually be better roasters out there, but that doesn't mean this is not an excellent roaster! And BTW, it costs $199, no matter where you look to buy it.

Best Roasting Pan EVER,

I bought one of these last year to use on Thanksgiving and have been wondering ever since how I had managed to live without one! It by far does the best job of making a turkey that I have ever seen. The turkey recipe I normally use involves brining the turkey and then roasting it, and in this pan it turns out amazing, I have everyone who tries it ask what my secret is, and my secret is this pan. I have also used it to make a delicious pineapple glazed ham and roasted two decently sized chickens at once in it as well. It is by far the best roasting pan I or any of my girlfriends have ever seen. Even my mom was wondering how I made her recipe better than her! If you are in the market for a roasting pan this one is hands down the only choice out there!
