Great old time recipes, April 10, 2011
This review is from: All-Maine Cooking (Paperback)
Received this book for a wedding present in 1973 - surprised the publication date is listed as 1987.
Great book for honest, old-fashioned recipes. One of my family's favorite cakes is the Persuasion Cake - the texture is close to cornbread, supporting complex icings while being rich enough to stand on its own or as a splendid compliment to sliced fresh fruit. Best of all, it can be prepared and baked in about 30 minutes.
There are a number of recipes that do not specify pan size, baking temperature or length of time to bake/roast/cook. Others suggest outdated references - for example, using a 10 cent can of an ingredient. A confident or experienced cook can compensate. The authentic recipes have a depth of flavor that is well worth the purchase if one is willing to use experience to make up for the missing details.
