Carrageenan is a thickening agent. It's the vegetarian equivalent of casein, the same protein that is isolated
from milk and used to thicken foods. Casein is also used to produce paints, and is the glue used to hold
a label to a bottle of beer. Carrageenan is the magic ingredient used to de-ice frozen airplanes sitting on
tarmacs during winter storms...

If Starbucks had true innovation on its mind, versus flailing in the wind as they are now, they would immediately introduce Almond Milk Lattes, made these with these creamy and scrumptious Almond Breeze non-dairy milks. The consistency is perfect for both teas and coffees - a vast improvement over those impoverished unnamed rice milks (you know who you are). New economy tip: I buy the Unsweetened Vanilla versions by the case from Trader Joe's, where they are only $1.99 per 32 oz.

I love almonds and am able to consume milk, but I wanted to try this product because it interested me. I was pleasantly surprised that it tasted pretty good and there is a slight hint of almonds. It was a little "thin" though. I thought it would be thicker like milk, but it was kind of creamy. Overall, a good tasting product that I will buy again. I think I'll try the chocolate next time. Yum!

Almond milk tastes great and is an excellant source of calcium also a good source for E,A and D. Great as a base for blender milk shakes and sauces. Try a cup of almond milk, one banana and maybe a peach or some berries. Yum!!!!!!!

I love this milk. I tried it as an alternative to soy milk and skim milk. I have a problem disgesting both soy and skim milk. I am on a low gylemic diet and this milk is low in fat and has a low gylemic index. My taste buds are hard to please, but this milk left me wanting more. I run out of it and could not find it over the weekend because my health store is closed on Sundays. I will never let that happen again. If you love almonds, you will like this milk.

This is my go-to, #1, absolute favorite milk. I buy it by the case. It's only 40 calories a cup! It's so delicious. It doesn't need to be sweetened, because it has so much flavor! I think it's great for baking, and I love to pour it over my hot oats for breakfast--it adds a ton of flavor. This stuff is just too delicious. I love the aseptic packaging, so I can keep boxes and boxes of it in the pantry. It's awesome!

I liked this product in my coffee, but I like cooking with it better. If you want some great low-cal healthy recipes, go to ....and try her butternut squash recipe--yummy! Tastes just like the really sweet and fattening sweet potato pie recipe, but so much better for you! She uses this product in a lot of her recipes, which is why I bought it.

What's great about this product is that it is both low carb and low calorie. It has half the calorie and carbs of soy milk. It also tastes (to me) much better than soy milk. I use the plain, unsweetened version of this with EAS Whey Powder Protein for a breakfast drink. It adds a great deal of protein into my diet with few carbs or calories.

People who like a bit of milk in their coffee or cereal that cannot have milk will find this product most useful. I honestly don't eat cereal, but my friends who do even put it in steal cut oatmeal.

I have tried to find recipes, but I am unsure if you can make cream sauces and what not with it. I kind of doubt it.

There is only one big downfall of this product, it is expensive in comparison to soy milk. The Blue Diamond web site has it much cheaper, but the shipping is outrageous.

If you've never made an iced coffee with any of the Almond Breeze beverages, you are in for a treat. 1 part toddy to two parts AB, no added sugar needed. Somehow this beverage enhance coffee flavor better than milk, and it doesn't have the beany taste of soy, which I avoid anyway. The aren't almondy like a mounds bar; the flavor is less pronounced with a smooth tho slightly thin texture. At 40 calories for 8 oz, with 20% of the RDA for calcium, this is a healthy refreshing drink on it's own. Also good milk substitute when baking, and makes great smoothies. Whole Foods, believe it or not has the best price (currently $1.99) plus a 10% case discount when you buy 12.
