5.0 out of 5 stars Great sub in gluten free baking
I'll come right out and say that gluten free baking is a pain. We went gluten free about 2 years ago and about 75% of the baked goods recipes I have tried did not work out in texture or taste. Then I read somewhere about substituting coconut flour for up to 20% of the flour in regular recipes and wondered if it would work for gluten free. It does! It gives more lift to...

3.0 out of 5 stars Amazon needs to get their act together.
This is a quality product, but Amazon shipped me some with only 3 months left before expiration. Buy your coconut flour at Whole Foods until Amazon starts telling us the expiration date.

It does! It gives more lift to baked goods like muffins, and adds a slight nutty flavor. One thing to be aware of is that it is moisture happy. It soaks up liquid like kitty litter, so adding a little more water or oil or whatever liquid is in the recipe is helpful. It is also helpful to let the baked goods sit a day before consuming. I'm not sure why, but this has been the case with everything I have made. It tastes "eh" the first day, and fabulous the next.

5.0 out of 5 stars Nice product for the price, July 4, 2009

This was the first coconut flour that I have ordered and it had good flavor and consistency. I would recommend ordering a recipe book if you have not worked with coconut flour before.

Exactly what you order, know that a little of this will go a long way though. Also, this type of coconut flour is dried from a lot of the fats and thus will soak up a ton of liquid as opposed to flour you make yourself from coconut flakes at home.

this flour is lumpy but sifts nicely. i keep it in the fridge and pull it out when i need to use some. i have made several receipes with it and it tastes great. it has a slight coconut taste but if you don't like coconut the taste is disguised when you use other ingredients.

Great flour! I found this one to have almost double the fat content but we got a great deal on it and the flour is just as good as any other brand I have tried. The flour is FLOUR (fine texture) and delicious!

I like the flavor of this flour. I do not however really know how to use it. It doesn't behave like I thought it would. I feel like I need a chemistry of baking class to understand it's properties. I do recognize that it cannot be a one to one substitution for wheat flour. The bread will fall apart. It does require additional liquid than regular flour to make a dough. Any suggestions on alternative flours and how to use them would be appreciated!

5.0 out of 5 stars Better than I expected., January 24, 2010

I have previously purchased several brands of coconut flour in local stores and this one, ordered from Amazon, is much better.
I used it in baking with excellent results.
I also used some in a custard that had not turned out well with a similar product but this one worked perfectly, producing a smooth silky texture with none of the graininess that marred my previous try.
I will definitely order this product again. Soon!
