Directions
Basic Cooking: One cup of quinoa for 2 people. Rinse the quinoa thoroughly and drain. Add one cup of quinoa to 2 cups of water in a saucepan. Bring to the boil, then reduce the heat and let simmer until all the water has evaporated (approximately 15 minutes). For best results, add a pinch of salt before serving.

It has a different texture than the white Quinoa....more nutty I guess you could say since the hull around the red Quinoa is slightly thicker. This makes it taste a tad bit different as well which isn't a bad thing at all...but it's hard to put my finger on it though. The thing is, if you like or are used to the white Quinoa, you may welcome this as a good change. You have to cook this a bit longer than the white Quinoa as well to get near to its fluffiness. What happens is that the hulls surrounding the red Quinoa (which the white Quinoa has as well but they are much thinner so it's not noticeable when eating) stay on the red Quinoa giving it that nuttier texture. I don't really care for that (I guess since I'm so used to eating the white Quinoa) BUT I cook it a bit longer than the box says to (about 5 - 7 minutes longer) and it's almost as fluffy. You cook it just like rice in a pot on the stove. I have not tried to cook this in the rice cooker as of yet nor do I think I will...that goes for the white Quinoa as well. Other than that, it's great for a number of things although I use it primarily for my stir fry veggie meals. Try a box at your local co-op/health food store and if you like it order it here. Its way cheaper to by it through Amazon even with a small shipping costs.

Quinoa is a staple in our household, it has tons of vitamins and minerals, a higher amount of protein then any other grain so it doesn't spike a blood sugar, gluten free, and comes naturally in "two flavors", white and red. i add white to my son's oatmeal and chicken dishes (white has a milder taste), and red quinoa goes better with red meats and tomato/avocado dishes. Although the difference is not significant, it is nice to have a variety.
I like Alter Eco brand because it is a fair trade.
I highly recommend it to everyone! I'd give it ten stars if i could.

I've been exploring organic, whole grains, and this is a winner. I was thrilled, after browsing quinoa, to find this fair trade variety (and a different variety of quinoa from the traditional white which I also bought). It was easy and fast to cook (just boil water or broth, pour in the right amount of quinoa, drop to a simmer and cover, check after 15 minutes and every 3-5 thereafter until almost all the water is absorbed, then remove from heat and let the rest of the water absorb). Then just use as you would any other grain -- under sauce, with veggies, in salad, or with just salt and butter. I don't cook much during the week so I fixed a whole box and it lasted for 3 meals. A new grain staple for me.

This quinoa is just not quite as good in my estimation as the less expensive variety sold by this company. It is somewhat grittier and slightly less fluffy. Other reviewers say it is tastier but I can't detect a more robust flavor after repeated trials. Even so, a really good product that most people will likely find nothing to complain of.

Alter Eco is quinoa with one huge difference from all other quinoa brands... They are lots of organic, pre-washed quinoa in the market but none is Fair Trade. Alter Eco is the real deal. An important part of my healthy diet, Alter Eco is a blessing since it's in organic form and a Fair Trade product where other quinoas never come in Fair Trade form regardless of the color of quinoa. Fair Trade is more expensive than none Fair Trade product. Prices of red quinoa has been going up to $10 a pound, which is the most expensive quinoa, than black, rainbow and yellow. Bravo, bravo, bravo.

KEEN-Waah... A complete protein source, a seed related to other healthy cousins like spinach and beets. In a pot I place quinoa, frozen peas, carrots, corn, add water and tomato paste. Spinach is added at the end the last minute. Stewing tomatoes for a half hour increases the cancer fighting lycopene content by 35 percent. Cooking also unlocks another nutrient, beta-carotene, in corn and carrots since heat breaks down the fibrous cell walls, releasing more of these antioxidants. The same goes for spinach but then you need to get your vitamin C from something else since that is the first vitamin which is depleted with heat. I saute lots of onion separately then in ten minutes I add paprika, cumin, dillweed, gram marsala, crushed red pepper, turmeric and lots of garlic 2 x 2 Pound Fresh Garlic USA California Heirloom Monviso Gilroy Finest (4 Pounds Total), mix it well and add the mix to the pot and let it sit without heat for five minutes. This is what vegans consume instead of beef since it is a complete protein. Greens, vegetables, nuts, seeds, etc.

I'm very pleased with this product. The price is much better than any that I've found elsewhere. The product is high quality and is certified organic. I would definitely order this again. The flavor of red quinoa is very nutty and is much tastier than regular quinoa.
