This asparagus cooker from Amco offers an alternative to blanching or baking to more evenly cook delicate tips and hearty stalks. Cook asparagus upright, tips up, with stalks immersed in 1 to 2 inches of water, so stalks boil and tips steam, producing the best results. The extra-deep basket also cooks ears of fresh corn or carrots and can be used to contain foods when deep-frying.

With minimal preparation, this cooker is an excellent way to steam asparagus. Some pointers: When cooking smaller quantities, you may need to tie the vegetables together so that they don't fall through the basket once cooked. And the tall basket fits covered in an 8-quart stockpot (or larger), so be sure you have one big enough to handle the job. Also, plan ahead when cooking as part of a meal; you might need the stockpot for other dishes. Because the cooker becomes too hot to touch during use, be sure to use tongs to remove the asparagus spears in a bunch.

It keeps the asparagus upright. Make sure to cut off the bottoms before immersing in hot water or the asparagus will remain too hard.
