This review is from: Amco Swing-A-Way S2046 Shrimp Deveiner and Butterfly Knife (Kitchen)
This knife is advertised as having a sharp edge but the truth is that the edge that's supposed to be sharp, can't even cut your skin. Very dull, and requires a great deal of sharpening on a motorized tool if you want to get the blade truly sharp. The back side of the blade is not sharp whatsoever, so it cannot cut through the back of a shrimp shell. This knife is a cheap imitation of a better knife of the same type made by LamsonSharp. The LamsonSharp shrimp deveiner knife is far superior to this one, though they have the same shape. I returned mine for a full refund. There is no way this knife can butterfly a shrimp with both edges of its blade so dull, they can't cut through anything. Also, the blade is so thin and fragile, that sharpening it would be a dangerous headache. Definitely go with the LamsonSharp deveiner though you'll have to sharpen that one, too, but at least the blade is already somewhat sharp and studier to endure sharpening on a small, fine grit belt sander.
