I am a former manager of a sushi restaurant working elsewhere in food right now. That being said my favorite knife has always been the fillet knife.

While on vacation I bought two fillet knives for a total of $22 instead of getting the $30 9" Russel fillet. I got the 9" American angler listed here and a gerber 7-1/2" fillet.

While cutting makizushi (sushi rolls) a task that is not usually relegated to a fillet knife, I noticed the moistened gerber knife seemed to catch on the rice and the Nori (seaweed) almost instantly, I had already wished I'd dropped the extra $8 for the Russel.

I took a deep breath and unboxed the American Angler 9" fillet, gaveit a rinse and was cutting rolls beautifully in only a couple smooth strokes. I was relieved at this point that at least one of the cheeper knives made it worth skipping the more costly knife. So now I would buy this cheeper knife again with confidence.

Couple side notes
-the edge of this knife is nothing fancy making it easy to sharpen with a hand sharpener if prefered.
-thehandle resembles that of a sanisafe or Dexter-Russel knife, after working in the food industry forseveral years including lotsof work with fish, it is safe to say youdont want knives with llots of grooves and maybe even a hole at the bottom for hanging. This leads to food getting into hard to clean areas that just get gross. So ya handle is a plus, and it has good grip.

medium-fliexible blade and long skinny profile makes this knife great for those tricky cuts on fish with tough skin but delicate tissue. The handle is nice and grippy - doesn't get slippery when wet or slimy. Steel is decent quality - typical of this grade of stainless steel - a bit tough to get a razor edge, but that's not really what this knife is for any way. Once it has an edge it holds it fairly well, and a few passes with a stone or steel brings it back up easily enough. Makes a great gift for a fellow fisherman or boat owner.

I just recived the knife and it seems nice its very sharp handle is good im gonna go get some snapper tonight to fillet with it but my only issue is the company is Americian angler and it says german steel on the blade but on the other side it says CHINA....so Americian angler dosent quite fit but it seems like a good knife for the price at least I didnt buy it at walmart lol
