The American paddlefish sturgeon is related to the Caspian sevruga. The caviar definitely compares to the Caspian fish. The taste, color and size of the grains bear this out. Paddlefish are harvested from the Mississippi river. With its outstanding taste profile this caviar is sure to please the most discriminating palate. Bowfin is another rayed fish, similar to the paddle-fish. This caviar is nice alternative to the expensive brands from the Caspian Sea region. Served as a garnish or on its own, this type of roe is not overly salty and has a firm texture.
