The book is bound like a 3-ring binder, so the pages lie flat.
I highly recommend this cook book for anyone who loves to bake and has so for years (like myself) or for someone new who wants to learn how to do same.
It also explains the differences between the variety of flours, and why they make a difference in your recipes - as well as many other ingredients.
