I'm disappointed in this book. I was looking for more recipes for organic whole grains like amaranth, farro, teff, millet, Kamut, buckwheat groats and quinoa. Not one of these grains are mentioned. All the recipes use spelt (which I already substitute in any regular recipe that calls for wheat flour) or purchased gluten-free flour. The book doesn't even tell you how to make your own gluten-free flour.
