I had an automatic sifter with triple screens, and it was a real workhorse; long after it had warped, it still worked just fine. But it was impossible to keep hard gritty stuff from collecting between the screens, and no amount of washing got them out. So I got this little crank sifter, which, admittedly, is puny by comparison. It's super light, and the crank doesn't feel all that sturdy. But the silly thing does the job, and faster than my old automatic. Moreover, it's simple to keep clean; you can easily wash it by hand. My one problem is that the flour sometimes leaps out the top, because the sifter is simply a semi-circular bar moving the flour on a single screen. So I wind up putting plastic wrap over it when I'm using it. Overall, though, it's a decent little contraption for the money.

After going through a series of new designs of flour sifters over the years decided to go back to Mom's old fashioned unit. It really does work best of them all - simple, useful, and holds quite a bit of flour.

If you do any baking from scratch, of course you need a flour sifter. It was time for me to get a new one; I have been using my mother's for over 40 years. It was only one cup, worked by pumping a handle with the fingers, plus it was just too darn old and hard to keep clean. The three cup size is much more practical, and I was surprised at how functional the crank was at rapidly churning out the flour. At $7.99 with both the 4 for 3 and super saver specials, this was a good purchase.
