I have been useing Analon knives...all the kitchen ones they make...for the past 3 years. I am a proffesional chef and use them in my kitchen everyday. I originally purcheased them to replace my Shon and Wustoff knives that continually get stolen or"dissapear" in the restaurant. That said, I wanted a decent set of knives that work and are comfortable but, won't break the bank when they go missing. Well, Analon fits the bill. The best thing I can say is that they are very easy to handle and when you cut as much as I do, that is a blessing as I already have terrible swelling in my hands everyday. Plus, noone steals them since they aren't real expensive. I love these knives overall. My only complaint is that they really don't hold and edge for very long. For the home cook however, this shouldn't be a problem since I am sure you aren't cutting constantly everyday. In any case, if you have a good steel and don't mind honing your knife regularly...you'll love these too!

I bought this piece because i just can't deal with my roommate's knifes anymore. and this is the greatest investment i have ever made in the kitchen. a knife that handles perfect and will be there for a long time. best thing is this knife makes cooking fun again.

The Analon Kyotsu knife is fantastic. It is like a perfect mix of a chef's knife and a Santoku knife. I found chef knives to be too long and the chopping motion limited with a Santoku. This knife solves both of those problems. In particular, the Analon brand is great, especially for the price. The knife is heavy, nice to hold, and comes with a bonus hard plastic sheath to protect the blade. Buy this knife

My husband decided to buy me a new knife as I have been using the same chef's knife for 37 years and it has nicks in the blade due to an experiment performed by one of our children many years back.
My husband had seen a santoku knife used by a TV chef and he thought I might like one. We looked at many knives. I like a big knife so selected a 7 inch Anolon Advanced santoku. I selected it primarily because the handle is so comfortable to hold and secondly on the testimony of the clerk had a smaller Anolon santoku knife and said he loved it. We took the knife home and I starting chopping every vegetable and fruit in the house. Then I trimmed some chicken tenderloins. It is different to use than my old chef's knife, the motion is slightly different, but in no time at all I had heaps of nicely minced, diced, and sliced veggies. It is a heavier knife, but I feel that works for me rather than against me because it requires me to apply less pressure, in fact almost none. This is only Day #2, but I am thrilled with this knife. I especially recommend it to those with carpal tunnel and arthritic hands.

I love this knife. It is a very sharp, balanced and wonderful knife. I have used to make gallons of home-made salsa, lots of dicing and slicing. Contrary to one the prior reviewer's opinion, it holds an edge extremely well. it is comfortable to use for me (6'-1', 220 Lbs) and my wife (5'-1", 100 lbs). It will replace a drawer full of knives.

I love these knives and have most of them now. My two most heavily used are the 7.5" and 5.5" Kyotsu - they are great knives I use to cut 1 or 2 things while preparing dinner almost daily. These knives have held an edge since I bought them almost 3 years ago without being sharpened once. Recently, I noticed that they are not as sharp as my other Analon knives that get less use, but they still cut quite well; it is just time to sharpen them. Analon also has a limited lifetime warranty on their knives, and I just sent the 7.5" Kyotsu back to them as it somehow developed a crack (I take care of it; always hand wash, and I keep it in it's protective plastic sleeve)near the handle - Analon is going to replace the knife for the cost of me shipping it to them (guess I don't need to sharpen that one...) I do not consider the crack to be an issue as it has about 3 years of use, and it is being covered under warranty. I will miss the knife for the 6 weeks it will take to get it replaced, maybe I'll have to buy a second one....

Very impressive knife. The weight is what impresses me the most, it feels good in the hand and is balanced. The blade was sharp out of the box and came with a cover. exactly what I expected

I bought this knife two years ago, and absolutely love it! While looking for a link to recommend to a friend, I decided to go ahead and replace the rest of my crappy "Miracle Blade" knives. My only regret is waiting so long to buy the whole set. While it's true that I've never owned a set of Henkles or Wustoff's, I think these Anolons are a great knife for the money.

This a very nice knife, but it is 13" long, the blade at its widest is 2.25," and weighs 9.8 ounces, but the cutting edge 'is' about 7 1/2" long.
