5.0 out of 5 stars Best knife in the drawer., June 4, 2006

This review is from: Anolon Advanced 5.5-Inch Kyotsu Knife with Hollow Ground (Kitchen)
I got this knife as a surprise gift for one reason and one reason only, and that was to cut corn. If you havent ever needed to do this, then you dont know that cutting corn efficiently, or without a LOT of pain is tough to do using traditional cutlery.

Well, with this knife and its blade, the job is a breeze and I'm talking about ripping up the job in about half the normal time. Amazing, and it performs general kitchen tasks better than anything else I own as well where a larger knife is not needed.

This great utility knife is only 5.5" so it wont handle the large tasks, but for all the unnatural acts and smaller jobs you encounter in the kitchen, this may be just the solution you need. 5 shucks

This knife is absolutely fantastic! I like how the blade is slightly arched back, so I can quickly chop through anything. I actually like this shape blade a lot better than the popular Santoku knives. I prefer this size knife over longer chef's knives as well. I use this knife for everything - the sharp 5.5" blade and comfortable grip gives me a lot of control. The sheath is a nice addition, too. Recently I bought 3 of these to give away as gifts.

A Kid's Review
This review is from: Anolon Advanced 5.5-Inch Kyotsu Knife with Hollow Ground (Kitchen)
I purchased this knife because I had already gotten the set which didn't include this knife. I can tell you that this is a wonderful knife and you will not be disappointed!!! Very sharp and please be careful becuase you can get cut easily from right out of the box. Comes with a nice case too which is a very nice touch if you don't have a knife block to put it in.

I have used many knives from wusthof, henckels, shun, global, kershaw, and can keep going...but this anolon knife holds a special place in my heart.

I encountered this knife at bed bath and beyond when doing the registry with my wife for our wedding almost a year and a half ago. The shape intrigued me and when I picked it up it fit well and had a good balance to it and at the price point decided it should go on the registry. Since having received this knife, I keep reaching for it whenever i need something cut. I have used a few hybrid santoku style knives including a furi coppertail before rachel ray's name was splattered all over the brand and this kyotsu has won out over all of them.

The curvature of the blade encourages a natural motion when cutting which is lacking in a santoku, all be it that is a very different style of knife. This is more like a chef knife without the decreasing radius at the point. The "sleeve" grip on this knife is less like a sleeve and reminds me more of a plastidip coating which you see on tools (think klein). In the year and a half of constant use the knife still looks new and the handles function perfectly with not signs of peeling or wear. The edge of this knife does hold very well for home use but under restaurant conditions frequent honing would be required.

Take proper care of this knife and it will last you for a long time. Pick up a SMOOTH steel and use it lightly on this knife whenever you take it out of the block or drawer. A steel is designed to realign the edge, not sharpen it, and a grooved steel can do more harm than good if used improperly. Remember to wash this knife by hand and do not put it in the dishwasher. I wash by hand and then dry with a towel, occasionally rubbing a tiny drop of olive oil into the blade. It keeps the knife looking good and helps prevent corrosion. I know that's kind of OCD of me, but that's just how I am :P

The knife is an excellent size for the majority of tasks, I am tempted to pick up the 7 inch version to see if I like it just as much but for the size of my hands i think the 5.5 is just right. The blade is thin and made of good steel. Agile and an excellent fit. I would give this knife four stars compared to the premium grade knives mentioned in the beginning of this review, but once you factor in the price I wish I could give it more than 5 stars.

This is the knife that you will find yourself reaching for most often as you prepare your meals. Be careful!! When it says it's sharp, it is. It has good quality steel and takes and holds a keen edge. Take care of it and it will serve you well for ever. I use mine for just about everything from chopping up vegetables to slicing bread to cutting chicken up to fry to slicing a roast for serving. I have numerous other knives in my knife drawer but this one just seems to fit better in my hand and do whatever I need done with no muss or fuss. It's balanced just right and a joy to use.

I was looking for a good Japanese style vegetable knife and was pleased to see the positive reviews for this very affordable knife - so I tried it and have ended up using this more than any other knife I own. It is so nice for chopping broccoli and root veggies. I absolutely love it. It is as good as any German or Japanese pricey knife I own. I don't think you will regret this purchase!
