Branching out from its already successful cookware line, Anolon introduces a cutlery collection using high-grade materials with good weight. The Advanced Collection knives feature blades forged from high-quality German carbon steel that resists rust and food stains. The stainless steel is ice-hardened for additional strength and longer edge retention. Blades are then polished with glass to produce an edge that is meant to be simultaneously sharp but smoother to the touch.

This 8-inch chef’s knife is ideal for chopping, slicing, dicing, or mincing fresh fruits and vegetables. However, the smooth edge works better on softer foods and feels a little dull when cutting through harder vegetables--such as winter squash or raw sweet potatoes. Immediate sharpening on a fine steel is recommended before using this chef’s knife to bring its edge to a sharper and safer angle for exact and injury-free cutting.

Full tangs and a counter balance cap on the Advanced Collection cutlery provide superior balance, while a rounded blade spine adds more comfort during extended periods of prepping. Ergonomically-shaped handles increase the comfort level of using these knives, and the cushioned non-slip Santoprene padding offers a secure grip, even when cutting with wet hands.

This chef’s knife comes with a tiny plastic tip to safely cover its point while resting on the cutting board between chopping tasks. A larger plastic sheath is also included to protect the blade during in-drawer storage. This is a nicely made knife. I would recommend it mostly for those who want to upgrade from cheap stainless steel, but can't afford to spend too much; more experienced cooks will probably not like it very much, though.

The sheath it comes with is not incredibly useful. It's a good idea, and some buyers may like it, but I don't use it because it feels like it may put pressure on the blade and cause it to wear more quickly and it makes storage a bit more difficult. Also, it seems like the sheath would become completely useless if food got inside because cleaning would be very difficult, if not impossible.

The blade is probably thicker than experienced cooks will prefer, and sometimes means that you have to use a little more force than expected when chopping.

The retail value that Amazon lists ($50) would probably be far too much to pay for the knife. Most large retailers sell it for around $30, which is reasonable price for the product.

All in all, if you're looking for your first "real" chef's knife and you're on a limited budget, this is an excellent choice.

I bought this knife after the one that came with my set somehow cracked. I'm pretty sure this was my fault as I tend to abuse my knives. I've had this one for 2 years now and haven't had any issues. I sharpen it regularly and it takes to that very well.

I bought the 8'' chef's knife several years ago at Macy's (for way too much) simply because I had just started cooking regularly and had no idea what to get. I still LOVE this knife and would only use this one. I just ordered the paring knife and got the big, useless knife set off of my counter (4 more inches of counter space-yay!) because I only need my chef's knife, my paring knife and a bread knife.

The chef's knife is a good weight and the handle is non-slip. So if your hands get wet you don't feel like you need to grip it tighter and have less control. It sharpens beautifully (although it does stay sharp for a long time) and I like the cover it comes with because I can just throw it in the drawer and not worry about it.

This is an amazing value--you will use this knife for years and years.
