This 4-inch chefs knife has a short, thick blade that provides better control for smaller-handed chefs, and is ideal for chopping, slicing, or dicing smaller fruits and vegetables. However, the smooth edge works better on softer foods and feels a little dull when cutting through harder vegetables--such as carrots or raw potatoes. Immediate sharpening on a fine steel is recommended before using this chefs knife to bring its edge to a sharper and safer angle for exact and injury-free cutting.
Brunello blades are forged from high-quality German carbon steel that resists rust and food stains. The stainless steel is ice-hardened for additional strength and longer edge retention. Blades are then polished with glass to produce an edge that is meant to be simultaneously sharp but smoother to the touch. Full tangs and a counter balance cap provide superior balance, while a rounded blade spine adds more comfort during extended periods of prepping.
