5.0 out of 5 stars Finally the perfect wok
I'm a Chinese so needless to say I stir fry a lot and I've been in search for the perfect wok/stir fry pan for the past 3 years. My criteria:
1. Non-stick
2. Flat bottom
3. Not too heavy with easy to grasp handle
4. Got to have lid

The first I bought was a Calphalon hard-anondized 12" flat bottom pan with plastic dome lid, since I liked Calphalon...

3.0 out of 5 stars It is not that good
well, for the first several months it was prefect, but after that, I could see tiny scratches (I promise I was extremely careful) and it began stick. I am really disappoint.

I'm a Chinese so needless to say I stir fry a lot and I've been in search for the perfect wok/stir fry pan for the past 3 years. My criteria:
1. Non-stick
2. Flat bottom
3. Not too heavy with easy to grasp handle
4. Got to have lid

The first I bought was a Calphalon hard-anondized 12" flat bottom pan with plastic dome lid, since I liked Calphalon brand and the pan is made in USA. But that pan was 5 lbs by itself with a very narrow handle, making carrying very tough and my wrist hurted. Plus it's stick resistant but not non-stick, making frying meats, fish even eggs difficult. Heating up is slow too due to the sheer weight of the pan.

Then I got T-Fal deep saute non-stick pan. Being a saute pan, the whole 10" bottom is flat, causing overheating spots if you don't have enough food to cover. After a few months use, the supposedly flat bottom became higher in the middle and lower around the edge, causing the oil to flow to the edge exposing the middle which is even more susceptible to overheating. In the end I went through 2 of this pan since the non-stick coating simply warped.

A few months ago I saw this pan on sale at Filene's department store and got a chance to check it out. Love at first sight! It satisfies all my criteria and I was excited it was available at Amazon[.com] with even better price and free shipping!

After a couple of weeks use, I like it even more. It heats up quickly, foods simply glide inside easily since it is a wok after all, unlike the T-fal saute pan. What's more, the top edge is covered with non-stick coating (unlike some pans with exposed aluminum), so any left-over grease on the edge is easy to clean and won't build up burned grease after long time use. The glass lid makes checking progress so easy. Lastly the lifetime warranty gives me peace of mind.

So I give this pan 2 thumbs up!

4.0 out of 5 stars quality cooking, August 2, 2000
By A Customer
This review is from: Anolon Classic 12-Inch Nonstick Stir Fry with Lid (Kitchen)
This stir fry (wok) is worth the bucks. It heats evenly & quickly even though a small surface area is in contact with the element, and cleans up well even when you forget to do the dishes until the next day. If you enjoy stir fry at all, this is the stovetop solution. We've had ours for a year, and it shows NO wear.

4.0 out of 5 stars Buy this instead of those "professional" cookware, October 22, 2003
By
This review is from: Anolon Classic 12-Inch Nonstick Stir Fry with Lid (Kitchen)
This stir fry pan is better than most. I like it because it is lighter than most. Handle is easy to grip and it comes with a cover which is a good one. It also last longer than most.

Enough praises. But I have to tell you that if you use it regularly, it won't last over a year. "Stir Fry" requires high heat and "Nonstick" requires medium heat. "Nonstick Stir Fry" means "good pan for a year". I use it 5 times a week and trust me, it will start sticking within a year no matter what utensils you use and how careful you clean it.

Having said that, this stir fry pan is still a good value. Especially the standard size cover which will out last the pan. Do not waste money on those "professional" cookwares that cost over $100. Buy 2 of this instead. The only difference is the professional is heavier and had a thicker Teflon coating.

When I switched to a radiant heat stove instead of electric or gas, I needed new pots/pans that were REALLY flat so food cooks evenly rather than burn on the spot that touches and doesn't cook on spots that don't.

I bought the 12-piece set of Analon Classic and really love them. I love them so much that I ordered this stir fry pan and lid. I love this pan so much. I admire its shape and everything. It's my most used pan. It's really big and deep, and the curved sides make it easy to stir things around; nothing gets caught in the angle. And it's a wok with a modified bottom that works on radiant heat!

5.0 out of 5 stars Analon Rocks!, November 8, 2005

I've had the eight piece set for a year and a half now, and this pan (sold without the lid) for about two years. They're all good quality, heavyweight cookware, and the non-stick works like a charm. I've not had a single problem with sticking, and the interior remains scratch-free.

I wonder if the people who complain about scratches are storing their pans stacked inside of each other. This can lead to scratching. One easy solution is to place a paper towel between pans when stacking.

No, it's not dishwasher safe, but you really don't need to put it in the dishwasher! It doesn't fit in my sink, either, but you don't need to soak it. The food slides right off, and it takes less than two minutes to wash the pan.

I highly recommend any of the Analon Classic cookware!

5.0 out of 5 stars Love this wok!, November 24, 2005
This review is from: Anolon Classic 12-Inch Nonstick Stir Fry with Lid (Kitchen)
I bought one and liked it so much, I turned around and bought a second so I can stir fry two batches at once. I have cooked in them several times a week for several years and they are still in perfect condition. I love the flat bottom and also fry and saute in these pots. It's great to have the clear lid. I use Chinese wooden spoons for stir-frying and they fit the slope of the pot perfectly and never scratch.

4.0 out of 5 stars An Apartment Dwelling Cooks Viewpoint, April 1, 2003

I find this Stir Fry very useful. It is big enough to do stir- fry for a couple of people and small enough to still fit in my apartment. It has the quality of my other Analon pans, I especiall like the added disk on the bottom. This not only keeps the pan flat on the burner but conducts heat so evenly that you don't have to use high heat settings to do your stir-fry. Because of the pans shape and construction it also doubles as a large sauce pan, I have even used it to brown up to 4 lbs of ground beef. When I purchased this pan the deciding factor was that it had a lid, it makes the pan a lot more versatile. The lid even fits Analon's 12 inch Griddle pan

5.0 out of 5 stars Anolon Cookware, August 2, 2005
This review is from: Anolon Classic 12-Inch Nonstick Stir Fry with Lid (Kitchen)
I have used the 8 pc set of Anolon for several months enjoying it more than any I have used over my 35 years of homemaking. I decided to get the set as a wedding gift recently, when I accessed Amazon on-line where I found Anolon offered at a price significantly lower than I had paid for the first set! I was also alerted to all the other fine pieces available to add to my kitchen at a remarkable low price compared to another site. I like: the way it cooks evenly, while you watch through the glass lids which all fit so well...how it holds the heat...the non-stick finish... the flat bottoms for my glass top range...and the ease of clean up!!!

4.0 out of 5 stars A Pan I Use All the Time, November 9, 2006

Although called a stir-fry pan by the manufacturer, this is actually a good general-use pan for tasks like making risotto and cooking various sauces, in addition to stir-frying. The bottom may be a little flat for stir-frying purists, but this what makes the pan good for other tasks. I already had a pan like this one that was about four years old and going strong, when the glass top slipped and shattered on our tiled kitchen floor. The top is an important part of the pan for some uses, so I had to order a new one.

I use this pan nearly every evening for cooking something. It heats evenly, retains heat well, and is very good value for the cost. The only reason it got four stars instead of five is its size--it is a bit large for an ordinary stove like ours--but its versatility makes up for this one problem.
