This knife is made from CrMoV steel, the same high carbon steel u will find on Wuthstof knives that cost 3 times more.

Im an amature cook, and this knife is an excellent deal!

few complaints:

1. the blade is thick! I have used kershaw shun, wuthstof grand prix, and henckel professional knives before, and anolon's blade is almost twice as thick as other brands.

when u cut through dense root vegitables such as yam, beet and etc, this knife requires extra pressure to cut since the blade is so thick.

2. i found the "mirror finish" useless. this finish will give a nice satin look, but the moment u start to re-align ur knife, the steel will scratch this "shiny" finish and destroy the mirror finish.

bottom line, the high priced german and japanese knives are little bit easier to use, but if u r just a semi-professional home cook, this knife is excellent for you.

This is a nice set, and a real bargain when listed on the Friday Sale for twenty. Two things to be aware of: The knife is made in China from German steel, and mine arrived with a removable sticker on the box, "Our Special Gift to You when you purchase $200 or more of Analon products." You'd probably want to remove the sticker if this item is intended as a gift, and therefore not have the item shipped directly to the recipient.

If you like knives that hold their edge, have good balance, and feel more expensive than they really are, this knife's a smart purchase. We bought ours with the intent to get Henckels. My husband loves to cook and I have demanding standards for tools in my kitchen, especially knives. Anolon were half the price and every bit as good.
As their reputation spreads, the prices seem to be going consistently up.
