I purchased the Anolon Professional Deep 12-inch Nonstick Skillet a couple of months ago and we absolutely love it. We own 15 pieces of Anolon Professional cookware and are very pleased with them. They have a very solid weight and feel to them, the handles don't get hot, the nonstick surface means that cleanup is a breeze, and foods cook faster at lower temperatures. One thing I would recommend, get a lid for this pan. It is much larger than it looks in the picture, and the lid was well worth the investment. I had to call Anolon Customer Care to order the lid (for a 12" pan). It cost as much as the pan, but it is worth it. We use this pan as much as any in our collection, and cleanup around the stove is so much easier because of the lid. If you are looking for professional cookware, without spending a ton of dough, look at Anolon Professional. Just be sure to read the instructions when you receive them, follow them to the letter, and this cookware should last a lifetime. Remember, if you can't cook, the next best thing is to look like you can, and this set will help you look like a professional.

Just because the skillet is big and deep, don't think this is not good for single serving meal.This skillet is deep, but it lacks helper handle, meaning that it is not the best choice for cooking a lot of food. Partly for the same reason, this pan's cooking capacity when stir frying is smaller than with a frying pan of comparable size. (The other reason being flat bottomed.) What I think this skillet is best for is something that needs a lot of space to be cooked, turned, or stirred. One or two mackrel can be very comfortably pan grilled. Fresh mackrel releases a lot of moisture and fat, but the fish still accepts sauce very well since released moisture can be quickly condensed in this pan, thanks to the large surface area. Two to three servings of risotto is not a lot of food, but requires a lot of space to stir continually over 20+ minutes. This deep skillet serves this purpose very well. Since the surface area is large, it is also good for braising with some fluid which is to be condensed towards the end. Another good use for this skillet is to cook dried pasta or boiling large foods. Boiling does not require the pan be lifted or stirred, so lack of helper handle does not incur difficulty. This 12 inch diameter comfortably accomodate dried pasta, and holds enough water to cook 2 to 3 servings of spaghetti comfortably. This skillet is made of high quality hard anodized alminum. Although the thickness is slightly less than Calphanon's top end products, the heat is applied very evenly on gas stove, and is somewhat lighter to my hand. I personally prefer non-teflon (not non-stick) pans but this one works pretty well. (As long as I have extra empty space, I feel this nonstick is easier.) This skillet does not come with a lid. I strongly recommend to find a lid that fits well if you buy this product.

I purchased this pan with the intent of making those "once-in-the-while" big meals when family comes over. However, it is so flexible that I have used my pan numerous times since I have purchased it. This pan is wonderful for stir frying, sauteing or pan frying. It is nice and deep keeping all the vegetables from falling out of pan and oil from splasing out. You don't need alot of oil to cook with this nonstick feature. It also heats up very quickly and distributes heat evenly across the pan. The curved edge makes it easier to stir your food. It is also very easy to clean up.For those of you who are wondering if the handle gets hot...nope! I thought I would have to spend extra money buying a heat resistant handle cover but it wasn't necessary at all. I hope the pan lives up to its' name. I have gone through at least one nonstick pan every year or two. Not to mention that they were not my primary pans. The only thing that I would like is a matching cover. Then it'll be perfect! Overall, if you are looking for that perfect multi-purpose pan...try this one for the price!

I've had this pan for 2 or 3 months now, and it has become my favorite kitchen tool -- other than my microplane grater, of course. For most of my extensive cooking life, I've bought inexpensive off-brand non-stick pans at hardware stores and five-and-dimes...not because I didn't want good cookware, but because I thought I couldn't afford it. The problem with cheap pans is that, well, they're cheap. They're lightweight and the lining scratches and flakes off after a few months. So either you have to replace them soon, or you keep cooking in them, and your food tends to scorch and just not come out the way you'd like it. I finally invested in some good cookware at good prices on Amazon, and I'm so glad I did. This pan in particular is a marvel. It's a wonderful size, heavy and strong, with very deep sides. You can cook a big batch of something in a sauce -- shrimp makhani or chicken in wine or sauce bolognese, and it doesn't splash, doesn't stick. Sauteed food browns perfectly in this pan without sticking, and the pan cleans up easily. Mine already has a few battle scars on the outside -- a food stain or two on the bottom which wouldn't come out -- but I don't mind that. I have a feeling that I'm going to have this pan for a long time, and it's just developing some character.

I bought this 12" Analon pan almost a year ago and have used it almost constantly. There is not one mark on the interior, which is a miracle! My utensils of choice are usually wooden but plastic is around too. The clean-up is almost instant. The pan is heavy, a plus in my corner, and the handle is long and doesn't heat up. I bought this pan as a replacement for a 10" T-fal chicken fryer which was chipped on the interior. There is no comparison between the two pans. The Analon wins hands down. I use a cover from an 8 qt T-fal dutch oven - it fits perfectly! I'm a happy camper with this pan and I've been cooking for more than 30 yrs!!!

There are good buys..there are great buys.. and then there are those once a year or so "I just can't believe what a great buy THAT was" buys. The Anolon 12 inch deep skillet falls into that category.. and if i could give it a six or seven star rating for overall construction quality, functionality and value ..I would. I originally purchesed my skillet as a supplemental skillet since the non scratch surface on my prior "first choice" everyday skillet was beginning to wear. But after several uses.. the old skillet simply made its way to the trash and the new one became my everyday mainstay. The steep sides provide a larger bottom surface area than most pans for frying or browning. The depth easily accomodates large items such as whole potatoes, or a several inch thick pot roast. ..or vegetables that start bulky but reduce in volume with cooking--e.g cabbage or leafy vegetables, or caramelizing onions for onion soup.And there's plenty of depth to add braising liquid for meats or stews without a risk of boilover. The hollow all metal handle stays cool for stove top use.. but allows for a same pan transfer to oven completion of a dish if and when desired. It's a great baking pan for sticky buns and an oversized tart tatin...and never fails to amaze me at how many uses it serves in addition to its original intended one. I found that the lid from my wok fit the pan perfectly..and gave a nice large steam dome as well. If you could own only one skillet... THIS would be the one. But I'm so pleased with my first one.. that I'm buying another for myself.. and intend to present several this year as holiday gifts as well.

Folks, this is the only pan you need in your house. Here's why: Easy clean-up; even cooking; good depth; lasting non-stick surface. As a mother of two young kids I don't have a whole lot of time for cleaning up. That's where this pan is the best. My husband and I use this for pancakes in the morning (you can easily fit about ten silver dollar cakes at a time in here) and it stays on the stove through grilled cheese for lunch to stir-fry for dinner. A simple wipe and it is clean everytime. WHAT A WONDERFUL PAN. My father-in-law is a chef and he fell in love with this pan the moment he used it. He found it great for braising and searing as well as simmering and sauteing. We use it a great deal for stir frying; omelettes; pasta primevera or any pasta/vegetable dish. This type of meal should indicate to you that the size and depth are very good if you are cooking for an average two-three person serving. This pan cooks evenly and unlike so many other non-stick surfaces....it LASTS. We have used it literally two to three times a day for 10 months and it works as well as the day we purchased it. Pancakes cooked at the outer edge of the pan turn brown as evenly as those near the center and slide right out. For reference, we cook on an electric coil stovetop. This pan has such a professional weight and feel to it that when I am able to prepare more elaborate recipes for the "grown-ups" I have the perfect tool at my disposal. We have found the one pan that we will ever need in our home and will never waste money again on another. In fact, we are so impressed with the quality that we have given two as gifts and have purchased another for ourselves in the unimaginable event something happens to the original. Don't let the sale price fool you, this is NOT a cheap product. Christmas is coming. Buy a couple, add in some pre-packaged gourmet goodies (pasta's dried herbs, etc) and wrap it up in shrink wrap. You'll have a superb gift at an easy on the pocket price!

This skillet is great. We just got rid of our wok and we loved it but this is better because the bottom of it is wider and the sides are still high enough for making stir frys etc. I definitely recommend this skillet!

I already had a set of these Analon Professional pots/pans and have recently bought a few from Amazon. I just got this Skillet to replace an old wok. Couldn't be happier! The edges are very high, so it's hard for food/sauce to spill over the sides, which is critical for stir-frying -- The heating is very even across the entire surface (even up the sides a little) -- It cleans quickly and easily due to the coated surface -- and my 12" pot cover fits just fine. Easily worth the price ... I am even considering picking up a second one :-)

Amazon, please sell this pan again, very few products end up with a full 5 star rating. It's crazy that you discontinue a product that's so highly rated! Somebody at Amazon is smoking crack, or what?
