This is an excellent book covering Italian food prepared as it would be in Italy.
Italian food is quite simple and based on top-notch ingredients that speak for themselves,and this book covers such food in a simple and easy style.There are no flourishes,and no extraneous ingredients that many in the U.S. feel compelled to add to their "Italian" food.So the ingredients are real and based on items that grow locally in Italy.You won't find any cilantro;strange chillies;Japanese mushrooms;non-Italian spices etc being thrown into these dishes just to make them different.This is as authentic as having an Italian grandma cook for you.
Follow these ,and learn to eat the way Italians eat,and forget what masquerades as Italian food in the USA,and the abomination that is passed off as Italian in California in particular.
