Respected worldwide, Apilco porcelain is fired at a higher temperature than customary, resulting in hard, durable products that resist chipping and cracking and can last a lifetime. Care is simple. Nonporous Apilco porcelain resists staining, and its smooth, bright surface cleans with scrub-sponge or cloth. It's also lead-, arsenic-, and cadmium-free.

Distinctions blur among forced-meat, seafood, and vegetable dishes (and even desserts) called galantines, pâtés, and terrines. Whenever one of the terms appears in a recipe, this rectangular mold (11-1/4 by 4-1/4 by 3-3/4 inches, length by width by height) is appropriate. It's also designed for pâté en croûte, in which a filling is baked in a pastry shell. Most of these preparations are served chilled, and Apilco porcelain goes safely from the oven to the refrigerator. Casserole preparations that don't need covering, like crusty baked pasta, can be cooked in this dish, too. --Fred Brack
