I have a paperback copy of the Fellowship of the Rings, and I notice there are further explanations of parts of the story in the Appendix. However, my book doesn't have appendices....what gives? What version of the Fellowship and the rest of the trilogy do I need to get to read the appendices?

The appendices are at the end of "Return of the King".

Tolkien originally wrote this as one book, not three. The publisher decided to divide it up into three volumes for economic reasons. Three-volume novels were normal in Victorian times but this is the first time it had been done for a while.

So what you want to do is get the other two books, or get a one-volume edition. That way you can read the entire story through and you'll be able to check the appendices at the end.
