It all started last week when I purchased a stainless steel apple slicer/corer. I then had to find an apple cookbook. I have three other Country Garden cookbooks so I knew this was a good choice. What a wonderful find! It arrived and I immediately found the perfect recipe to begin with. Page 75. Apple & Dried Cranberry Crisp.

I must confess I made some changes. Instead of using dried cranberries, I used dried cherries. Instead of the cinnamon, I used Penzey's Apple Pie Spices. I baked it in an 8X8 Pyrex (square) dish so I only used 3 apples and not the 6 suggested. However, I did use all of the topping. I cooked it longer than the 20 mins. with foil, 20 mins. without it. What a delightful dish! The apt. smelled like an orchard for hours. A neighbor knocked on the door and asked, 'What is that incredible aroma?!' He went home with a large dish of the crisp, and a smile on his face.

This dish can be used at breakfast with eggs, bacon or sausage. Can be used for lunch as a side dish with pork or chicken. Can be used for dessert at dinner with vanilla ice cream or heavy cream. Hot or cold. So simple to bake. Such wonderful results. I am going to make another batch Sat. and watch a movie. Instead of having my usual popcorn, it will be this wonderful apple, cherry, pecan crisp!

There are numerous apple recipes in this small book. Many of them are not found in typical apple pie books. If you love apples and want something really yummy, this book is for you. I am so happy I bought it.

I own this and all the Country Garden series of cookbooks. They are all visually gorgeous, and all written by professional chefs. Each book surrounds a featured ingredient which is seasonal. I must admit that many of the recipes could be considered "chi-chi," but for cookbook collectors, this series is really wonderful. I'm sorry they stopped adding to these books, and very sorry that they are going out of print.

There are great recipes along with artful pictures.
Apples is part of a set of books and there are few left.
I would recommend getting them before they are gone.
"A Country Garden cook book" includes other books such as potatoes, squash, herbs
pears, lemons etc.
