5.0 out of 5 stars Quite amazing
I bought this clay pot about a month ago and have been using it quite often with excellent results.

This pot is bulkier than my 6-quart cast iron pot but much lighter; it's also asymmetric (one end is taller and wider than the other). The lid rests nicely inverted on its "foot" and is self-basting.

It sears meats beautifully, you just need to...

3.0 out of 5 stars Does the job
I have used it for tagines a handful of times and it does the job. My only disappointment is that the bottom always burns no matter how low I let it cook.
The first one came with a cracked lid. They sent a replacement.

This review is from: Appolia French Ceramic Oval 6 Quart Flame Top Casserole Dish (Kitchen)

It sears meats beautifully, you just need to let the pot heat well on high and then add oil and the meat. I prefer to coat the meat with oil just before searing it.

It's hard to say if this clay pot produces better results than my enameled cast iron pot but I really like how it braises and sears. Very easy to clean -no soaking needed- and doesn't scratch or retain odors. Food does not stick at all and no hot spots.

Unlike other flame top clay/ceramic vessels, the Appolia does not need seasoning or soaking to absorb moisture prior to each use.
