I bought this book almost five years ago and still reference it all the time. If you are looking for authentic Arab recipes (from the Sham region), in their cultural context, this is your book. The author does a beautiful job of explaining the ingredients, and his stories about life in his Arab homeland are priceless. The Ramadan recipes include stories about what life is like during the weeks of Ramadan, and there are countless cultural references that make this cookbook a true gem.
I do adapt some of the recipes because I might not have the ingredients on hand. Also, some of the measurements are metric and may be unfamiliar to Americans. The recipes sometimes yield large quantities -- you have to halve them etc. if you want to make smaller portions. Overall, I love that this book is on my cookbook shelf. I wanted a good Arab cookbook when I bought this -- and got something beyond my expectations! |
