I am blood type O and have found that by eliminating wheat from my diet makes me feel so much better that it is worth the work to bake my own cookies, cakes, brownies, etc. My son is diabetic, so it is important to use whole grains and I sweeten with agave too. Everyone who tastes my baking loves it and can hardly believe that it is healthy and diabetic friendly! I find I can do almost any recipe that calls for white flour with this flour with great results. The subscription option makes this flour half the price it costs in my local store. I highly recommend this healthy and wholesome product!

I use three cups of bread flour
1 cup of this spelt flour
and make terrific no knead bread. Add a little vital wheat gluten for lift if you are not sensitive and a little rye flour to help jazz your yeast -- especially if you are working with sour dough.
the result is terrific.

Still love the flour. Rethinking my subscription with Amazon as the last batch came poorly packed, with two of four bags torn. it was a mess.

Arrowhead Mills offers consistently high quality products that we depend on. I do prefer the white/light spelt flour when I can get it, because it will bake up a bit better, but this whole grain flour works as well to create bread and cookies for those of us who can tolerate some gluten, but not wheat.

So the spelt is fine, works in my baking, but the bags came all broken up because the bag is made of paper and the packages didn't protect it from being jostle around.
