Artichoke Lemon Pesto Appetizer Dip Recipe

  • 1 cup Artichoke Lemon Pesto
  • 1/4 c. Mayonnaise
  • 1/2 c. + 1 T. Parmesan Cheese

Preheat oven to 350 degrees. Mix together all ingredients except 1 T. cheese until blended. Spoon into baking dish and evenly sprinkle the remaining cheese over the top. Bake for 30 minutes or until cheese bakes into a golden crust. Serves 6-8.

This is a fabulous pesto that makes an even more fabulous dip! We got this as a gift and after a year of it sitting on my pantry shelf, I pulled it out today and added the 1/4 c. mayo and 1/2 c. parm cheese it suggests, popped it in the oven till bubbily and served with crackers. What a quick and easy, delightful surprise. I am going to buy more now! The lemon melds so nicely with the artichoke. YUM!
