Because sushi masters treat their knives with reverence, this three-knife set comes in a hinged case with a synthetic, woodlike exterior and a padded interior lined with brilliant scarlet flannel. The set contains a 7-inch cleaver-shaped usuba knife for chopping and filleting, a 5-inch petty (utility) knife for peeling and shaping vegetables, and a 10-inch straight-edge, blunt-end takohiki knife for precisely filleting and slicing fish. (Takohiki is the eastern Japanese name; in western Japan this type of fish knife would be called a yanagi and would be pointed.) These knives are stamped--rather than forged--from high-carbon stainless steel; Japanese-style, they have no bolsters so they're sharp from tip to heel. (For clean, straight cutting, the takohiki blade is ground to an edge on only one side with a single bevel.) Full tangs, for strength and balance, run through classic three-rivet polymer handles, which are ground so there are no seams.
