A terrific gift for a cook who prepares Asian foods, this set consists of a 10-inch yanagi knife, a 7-inch santoku knife, and a 5-inch petty knife and comes in a padded storage case strikingly lined in scarlet cloth. Made of high-carbon stainless steel, the knives have full tangs and handles formed of a tough polymer. The yanagi, ideal for preparing sashimi and sushi, has a beveled edge that runs straight from heel to blunt tip. For clean cutting, the edge is ground on only one side with a single bevel. (In eastern Japan this type of fish knife would be called a takohiki and would have a blunt end.) For Asians, the santoku is the workhorse of the kitchen, equivalent to what the French chef's knife is for Europeans. The petty knife is for peeling and cutting vegetables and fruits or trimming meats or poultry.
