This stamp is fantastic...if you're having issues with the impression, roll your dough into a small ball and then press the stamp (not all the way through) to flatten and make the kaiser impression...then turn them over to rise top side down (yes, it helps them retain their shape). After they've doubled in size or when the size is what you'd like, before baking, flip them back over and bake away! Works great!

This is a nice little kaiser stamp that is good for the home cook. I usually make about a half a dozen rolls at a time. You let the dough balls rise for about 20 minutes, then use the stamp on them. I sprinkle a little flour on the rolls before stamping to prevent sticking. This looks much nicer than using the folding method. I hand wash the stamp when I am done using it.

I tried to make Kaiser rolls and shaping them by hand and they turned out looking like wrinkled rolls. Purchacing the stamp was the best item for shaping Kaiser rolls. I shaped 30 rolls in less than a minute. What a change from almost 30 min for 30 rolls.

I "shopped" this item and none of the stamps I studied included a feature I wanted in their product description. I wanted some type of depth gauge to prevent me from cutting too deeply into the dough....My first attempt at Kaiser Rolls went well but I used my dough blade and cut too deeply, which gave me something that was more like monkey bread, oops. While the description for this product does not say it, this stamp actually has an automatic depth gauge. You can not go wrong. I love it.

Used for the first time, 1/6/12, and it worked just fine. It didn't stick to the dough and made a good print. I may press it a little further into the dough next time to get more defined lines. I believe this to be a "user" error.

The reason I bought this item was to flesh out an order to make it qualify for super saver shipping and I love kitchen gadgets! <GRIN> Also, I was tired of making knotted rolls and wanted to make rolls reminiscent of the Bronx neighborhood bakeries. Anyway, I tried it out and it worked great! What was funny is that King Arthur flour is now offering the exact same cutter for sale in their catalog at a higher cost. The only complaint I have is that, even tho' I didn't need it, it would have been nice to include a pamphlet with tips on how to use it or even a couple of recipes. Btw, if you want crusty rolls, I have two tips -- first, knead an extra cup of flour into the dough. It should be a little dry before the last rise. Doing that also helps the dough retain the cuts and also makes it a little harder to cut all the way to the bottom which would give you a daisy roll instead of a kaiser roll. Second, 5 minutes or so before you pull the buns out of the oven spray them with cold water. Don't soak them; just dampen them.

This little helper makes shaping Kaiser Rolls a snap. I can fold them but the stamp cuts the time down 75%. I stamp the rolls then flip them upside down for half the proofing time and them flip them rightsideup for the rest of the time.

I'd recommend it to anyone. A great stocking stuffer for anyone who bakes.
