It's not always convenient to borrow my Great-Grandmother's heavy flannel pastry cloth and rolling pin cover, so I bought this inexpensive set for myself. The cloth is a thick, stiff canvas that holds the flour and releases the dough nicely. The knit rolling-pin cover is long and stretchy enough to easily cover any of my large rolling pins. I used this set to roll out and cut an entire batch of refrigerated sugar cookie dough and even the warmer, re-rolled dough did not stick. The pastry cloth did scoot around on my table cloth more than I'm used to, but overall I was very impressed with this set. I was surprised and thrilled that it worked just as well as my Great-Grandmother's. I bought a second set for my Mom.

After using my other cloth pastry cloth/pin cover for 28 years, it was time to replace them. I tried to use a plastic variety of sheet that I purchased in a local discount store that begins and ends with "T". What a disaster!!! Even though I had added plenty of flour to the mat, the pastry stuck like glue, wouldn't spread out evenly, and only released in pieces. I saw this Ateco set on Amazon and was almost afraid to try it. Well, what a pleasant experience! The pastry cloth allowed even distribution of dough and released the pastry onto the rolling pin to lay over the casserole dish just perfectly! The pin cover was a little long for my pin but even though I folded the ends over, it made no marks on the dough. No one who makes pastry need look any further than the Ateco brand of pastry cloth and pin cover for performance and reasonable cost!

Everything is working great. My only complaint is that the cloth is bigger then my counterspace and the rolling pin cover is about 6 inches too long for my rolling pin. It has been very workable, though, and has rolled out some great pie crusts.

The title tells it all, but here are the details. Let’s take the pastry cloth first. Ateco’s cloth is a generous 25” x 20”; a little larger than some of its competitors. The cloth is a specially treated, very stiff canvas for the sole purpose of rolling out pastry, cookies, even noodles, using the least amount of additional flour. The result is a flakier crust. The treatment applied to the canvas helps it repel grease and moisture. As a result, it requires special handling. The accompanying directions in the package are very clear, but here are a few pointers.
• Rub (vigorously) a generous amount of flour into the cloth (to be done each time and it will improve the cloth’s ability to make lighter, flakier products)
• Scrape off any excess dough and flour to clean it when finished using the cloth. There is no need to wash it if you handle it properly. (The directions for washing/drying are included in the user’s guide.)
• Prevent the cloth from moving as you roll. To do this you will need to place it over a board, tucking its edges under it. Another way is to allow the upper edge to be free while the lower edge is held in place by your body as you roll.

***The manufacturer doesn’t offer another method, but I do. Buy four small suction cups; one for each corner. Using paper clips (or small metal office paper clasps) put one at each corner. Place each suction cup on your work surface (laminate, tile, granite, etc.), spaced just far enough apart for the pastry cloth to be gently pulled. Now attach each clip to a suction cup. The cloth should be spread tautly. You can now roll without the pastry cloth shifting on your work surface. If you are handy, you could attach grommets to each corner and simply hook each one onto the suction cups.

How did I make it to age 47 without ever hearing about pastry cloths before? I've been baking since I was 12; someone's been holding out on me!! I read a lot of reviews before deciding on purchasing this combo. It does make dough and cookie making much less messy, but I did have to put a non-skid pad underneath to keep the cloth from sliding around. I took piece of non-skid shelf liner and cut it a little smaller than the pad and this works well. I really like the rolling pin cover, too. I keep the cloth, pin cover and non-skid pad together in a 2 gallon ziploc bag when I'm not using it. I really like using the pastry cloth and am quite pleased with it.

This was our first purchased pastry cloth and we've found it to be just as described. So easy to roll out, releasing as we expected. Cleanup is a snap. I would recommend it -- and the seller. Haven't used the rolling pin cover, though, as our new pin works fine without it.
